In particular, I am interested in ways to protect Jor Kadeen the turn he comes into play. Cards like Grand Abolisher and Mother of Runes are perfect in this kind of deck. On the play I can usually kill before they can find a sweeper, but cards like Swords to Plowshares are the troublemakers. Thanks for the help!
First glance there seems to be a lot of bad edh cards like lightning bolt
This couldn't be more wrong, Lightning Bolt is one of the better removal spells in 1v1 EDH.
The land count is borderline unplayable even with all the mana rocks. I would try to up the land count to 35 minimum and even that is dangerous from a consistency stand point. To fix this I would probably cut a few of the worst mana rocks for land. Other than this, the list looks pretty solid.
A couple cards to consider are: Imperial Recruiter can find 80% of your creatures Umezawa's Jitte Pretty much required in any 1v1 deck, removal, speed and longevity all in one card. Sword of Fire and Ice Again, staple 1v1 especially in Boros colors where card draw is a problem. Precursor Golem pretty much required in this deck, 9 power for 5 and achieves metalcraft by itself. Karn, Silver Golem Helps achieve metalcraft Tangle Wire very good in aggressive decks Wurmcoil Engine Can be ramped into and is very problematic to remove.
I will continue to think about possible cards. I like the deck keep it up.

Testing indicated to me that 35 was too much (the land count was 35 for awhile). With that said, it's entirely possible that I have cut a few too many lands. Maybe 32-34 is right. Take a look at how many mana sources there really are in this deck; dont forget things like Simian Spirit Guide and Scuttlemutt! Also keep in mind that the deck's curve stops at 5, you really only want 3-4 lands for the first 5 turns.
I really like the suggestions of Jitte, Wurmcoil, and Tangle Wire. Good finds, I'll consider their inclusion.

i have had incredible success with Jor- i feel like he is overlooked big time. I use 33 lands and that number has been working for me. Notable inclusions would be manakindispatch, and a little more spot removal.

my apologies- but i do feel like Jor has potential and the discussion to optimize him is a worthy one.
I think the question is, "why Jor when I can Iroas?" The god is one mana less, resistant to removal, and provides evasion and protection in combat. Arguably, it does this with less hoops to jump through than Jor.
Although we can work together on a list (my list above is a GREAT starting point) I feel it may not be the most optimal use of our time.

may i say i LOVE that list- it looks frighteningly similar to what im currently running online. I do run a sunforger package, as its too fun not too. infect is probably the most "spike" jor kadeen can be built- and im not opposed to it, but i get so much hate online just for the small mass land destruction i use- im afraid ill be blocked from the world if i run it. Galspanic has a great infect build out there i believe as well.
My problem with the gods is besides erebos and kruphix- they never seem to do enough. i have rarely faced iroas, let alone another god (nylea?) that i found to be a worthy opponent.

And Galspanic's is what I was referencing. Funny story I took that list, and extrapolated into a Dega/Mardu Infect with Kaalia (she could dispatch Skithiryx, Rakdos 1.0, and Master of Cruelties for the win) because of the better density of creatures (crusader, vatmother, and the spectre come to mind), Anthem of Rakdos, and Fervent Charge (which replaced the huge static buff that was Jor Kadeen's purpose otherwise). Oh yeah, and also because Sorin, Lord of Innistrad's emblem is pretty legit in conjunction with Infect.
i liken my list more to Fluxuate/ Magicrors' Rafiq list- more tempo/ spot removal. When i get the chance later i will post. But yes Kaalia makes more sense in the infect shell. May need help making it french rules compatible, but as of now its what i play online.
