Super Smash bros wasn't on the original poll cause i really didn't consider it a fighting game.it's just for fun really, although there are some pretty sick combos out there, i figure it's more casual type of fighting game. CvS however, is more competitive. I've played alot of fighting games, but i really like CvS2. It's got most of my favorite characters, and the special system is nice. BTW, for those interested I play n groove, Iori, rock and Terry.
Oh, there are competitive Smash Bros. tournaments, all right, if the boards on GameFAQs are any indication. There was a recent Nintendo Power article about the success of SSBM, and it included stuff about tournaments there.
Tekken Series with SSB series coming in close second.

SSB. It was refreshing, fun, and not serious. It's hard to get angry at a friend while playing the game because he killed you with a carefully timed turnip.

Dead or Alive. I've been amazed by the visuals since I first played DoA2 on Dreamcast. It's not the most complex or deep fighting experience, but it has enough going on to keep it interesting without being frustratingly complicated to master.

Guilty Gear for me. Beautiful graphics, extremely deep gameplay and by far the quirkiest characters ever. I remember once a friend of mine played for two hours straight- me as Ky and him as Sol for every game- and we didn't get bored. Plus it has Slayer. Slayer kicks ass.

Smash Bros. is awesome, but my favorite for 'pick up and run' play was the Dreamcast game Power Stone, from Capcom.
It was just as easy to play as Smash Bros., and the character design was on crack. An English fighter pilot, a mummy-thief with knives (named Jack. Capcom, you are so silly.), and a dude named [i]Wang Tang[i]. The game is awesome.
And the final dude is so hard, especially after the relative ease of the previous levels. D:
I wish there was another Power Stone. Because I love it so.
