Warrior - Red - fueled by rage
Monk - White - serene mind, disciplined
Druid - Green - instinctual, wild etc
Warlock - Black - greed, selfishness, willing to go to any length for power
Mage - Blue - The most scholarly of the classes, sometimes crazy and creative (maybe a bit of blue/red)
Here's where they start to get less monocolor:
Death Knight - Black/White - They are walking corpses, but they are driven and disciplined. Call upon dark powers for aid.
Hunter - Red/Green - instinctual like druids, but also passionate. Relationships with their pets are more red/green than straight green.
Paladin - White/Red - Can't be monowhite because of their passion for dispatching evil. "Retribution" screams red/white.
Priest - Blue/White - They are scholarly like Mages, but they study holy texts etc. I don't think monowhite fits them
Rogue - Black/something - Not sure about these guys. They lurk in the shadows and take cheap shots, but they are also highly trained/skilled. Not sure which colour combination fits them best.
Shaman - RUG? - They are instinctual, passionate and also wise. I think RUG is the best fit.

There has never been a land that enters the battlefield untapped unconditionally and taps for two colors unconditionally. That would be strictly better than a basic land
Warrior - Red / White. Red because many of it's flavor revolves around getting stronger with rage. White because they are disciplined warriors, use many combat tatical abilities, moral boosts and are stark defenders of their allies. A big part of warrior flavor in warcraft is finding the sweet spot between endurance and offense, something that scream white/red imo.
Paladin - Mono White. Pretty straight foward, the class use a mix of white military style and holy spells. I disagree with op on red paladin because there isn't any paladin skill that scream red. The retribution associated skills are closer to stuff like Divine Verdict.
Death Knight - Mono Black. Death Knight have black military style (being ruthless, cruel fighters), vampirism and necromancy, all of black stuff. They back ground are also pretty much black as well. Although they use ice magic, I think it's a black kind of ice magic, not a blue one. Basically because death knight's ice magic is a nod to termal death rather then a elemental discipline (like mage's).
Shaman - Red / Green / Blue. Red comes from the "earth, storm and fire!", dozen of lighting spells and their signature bloodlust spell. Green makes the second color for their healing is also thematically green and theres also the many pump spells that feels green to me, such as strength of earth. Blue is a third color representing the elemental forces of water and air and their signature far sight ability. Shamans use magic to augment their wisdom as well, something very blueish.
Hunter - Green / White / Red. Green is the primary color of hunters for obvious reasons. Hunting animals, training animals, expertise survival and tracking are all pretty green. White comes in the form of the hunter's disciplined marksmanship (which falls into white military imo) and traps, which are wow's form of "destroy/punish attacking creatures". Red is only a splash, covering the many explosive devices the hunter use as well the fact that some hunters are as ferocious as their savege animals. Skills such as misdirection could also be red, by making the combat confusing and chaotic for their opponents.
Rogue - Black / Blue. Black is assassination and offensive use of stealth to kill enemies before they are awere and the many poisons the rogue use. Blue is the supportive skills, such as sap, using stealth to scape / bypass enemies (which is hexproof/evasion in magic) and lock picking / pick pocket (coastal piracy effect). Distract is another very blueish ability rogues employ. Rogue's combo (combo is like storm) and careful style of combat is also blue.
Druid - Mono Green. Conjuring plants, shapeshifting into animals, pumping, windstorms and the healing style of the druid are all green. Druids are also guardians of the natural order as well. The only part of the druid green doesn't cover well is their celestial magic (moonfire, etc). Not sure which color could cover that properly but I see then as some sort of colorless burn / removal.
Monk - Green / Red. Not so sure about this sinse I didn't play MoP xpack. I think monk's combat style and philosophy of harmony and body/soul balance is fairly green to me. The healing vapors and self pumping abilities sounds green as well. Red is the second color covering the druken brawler trop, the taunt abilities and the many rock themed abilities, not to mention the signature fire breath.
Mage - Blue / Red. I agree with OP that mage is the most schoolary of all classes. Blue covers the many insight magic such as Arcane Intelect. It also covers the arcane support spells thata re very blue, such as mirror image, counter spell and teleportation. Blue also covers the ice magic. Red is here for the pyromancy and for the fact that many mages are izzet-like, being dangerously creative. The arcane offensive spells, such as Arcane Missiles, I see as a mix of blue discipline/metamagic and red determination mixed to explore a unknown/forbidden/dangerous form of energy.
Priest - White/Black/Blue. Thematically Priesthoods in WoW are the prime exemple of what a Esper colored organization is. They are careful planners, heartless dominators and protectors of order. White comes from the faith, holy, healing and protection spells. Black is the other side of their religion, which is the shadows of deceit and merciless punishment. Blue tie both sides in the self discipline side (the same way blue tempers black and white impulse in Urza and Jace). Blue is here as well for the mental discipline of Priests, with Mind Control effects and such.
Warlock - Black/Red. Conjuring demons, curses, entropy, life leeching and sacrifical rituals. It's pretty obvious why warlocks are primary black. The red part comes from their piromancy and massive destructive magic. Warlocks are very passionate (unlike necromancers and lichs) and their passion fuel their magic of hatred. Imps, something they are veyr found of, are very like red devils in magic as well. Also, red covers the chaos side of the warlocks. Chaos energy in warcraft translate as "can't be prevented damage" red effect in magic.

These were my initial thoughts:
