I already work and go to school again for a second degree. I have spare money that just sits in a savings every month.
What sets are the right ones to choose?
Also I would be doing next to no work selling / shipping it. Id even have the redeemed cards shipped right to my family instead of me to handle the selling process. Id just collect my money after it sold.

It's very possible but just make sure to add up all of the fees before doing this as the fees add up very quickly. Redeeming and selling on ebay is exactly how MTGOTraders first started(although margins were huge back then) but you can still make some good money redeeming if you time it right. Just keep on eye on set prices and wait until the different between the paper and MTGO price is enough before pulling the trigger. Also you should do at least 8x at a time to make any real sort of profit or it will be more work than it's really worth.

i was curious about the redeem and resale process as well. what current standard sets do you feel are the most profitable and which ones take the most and least amount of work to resell? when you split your sets up do you also sell bulk lots and how much do you get for those?

So you have a reasonable income and are tight on time? In that case, MTGO redemption for profit probably isn't a good idea.
Now if you were unemployed but had some savings I might recommend it. But if you are working, investing a fairly significant amount of time to make a few dollars is not a great idea.
As to how to actually make money - I believe the most profit comes from redeeming 4x foil sets, splitting them, and selling the cards as playsets of individual cards. But I have not done that for some time. I used to sell 1x regular sets in Australia as well as there's less redeemers here.
