A creature with infect attack me, and no blocker on the field. At the end of blocker before damage resolution opp plays some pumper spells.
My question:
Are there any ways to wait my opp use all their pumper spells before i unsummon his creature? are there any ways to identify wether opp already done with his spell and still i can unsummon his creature.
Some times i wait until he plays two or three pumper spells and after it resolved he said that it is to late to unsummon his creature. Pretty confused about it.
Before any step/phase can end both players must pass priority over the stack whilst it is empty with out adding anything new to it.
Once your opponent has finished casting spells to boost his attacker he must pass priority back to you before the game can progress onto the combat damage step. At which point you can use which ever means you choose to get rid of the attacking creature.

To be clear, once he reaches the declare blockers step (the last point in time to cast spells before damage is dealt), your opponent can choose to cast a spell or pass priority. If you cast a spell, he gets the chance to do things again, but if you pass, the game moves to the next step. Now, he can cast a pump spell, let it resolve (assuming you have no responses), cast another one, let it resolve, etc. but when he's done, he has to indicate that he's passing priority to you.
So if you want to know if he's finished casting spells before damage, just ask him. He'll either say yes, or have to cast another spell, after which you'll get another chance to respond.
On the other hand, if he asks you if you have any effects and you say no, he doesn't get another opportunity to cast spells, the game moves straight to the next step.

If your question is "What would a judge do is this situation?", only one person's answer is relevant, and that is the Head Judge at your event. I can quote the rules, but I don't know your HJ.
the elf is tapped and attacking, and after the blockers are declared, he'll gain priority and have the chance to cast a pump spell.
If he passes priority, you can bounce or let it deal damage.
If he uses a pump spell, he will either pass priority again, or hold priority and play another spell, and so on, until neither player decides to cast a spell.
So if he pumped 3 times, you will still have the option to bounce the creature. Your opponent was wrong.
