In two-headed giant, if I have a circle of protection: red out and my opponent controls a bunch of red creatures and attacks, is there a way for him to deal the damage to the player even with the circle of protection? Or can I use my circle of protection on any of the opponents red creatures regardless of which player they attack?

Creatures don't attack players; they attack the team as a whole.
When combat damage is assigned, though, the controller of each attacking creature chooses which defending player will take the damage. All the opponent has to do is choose the player without the Circle.

If creatures attack teams as opposed to players, what would happen if I attacked an opposing team with a Hypnotic Specter, then?
