Okay, the newly introduced keyword of 'fight' has me a bit confused. I understand what it does, but what abilities get taken into effect with it? Does deathtouch come into play with fight? Seeing as deathtouch just specifies all damage, not just combat? Does lifelink get factored in? I assume first strike and double strike don't, and neither does trample. Just trying to get an idea of what does and doesn't factor in when a card like Prey Upon is used.

You've got the right idea. Anything that applies to all damage dealt by the creature applies to fighting. Anything that only changes combat damage doesn't. Fighting is much the same as, say, Prodigal Sorcerer's tap ability in that regard - it is simply noncombat damage dealt by the creature.
The damage sources are the creatures themselves, not the 'fight' source, namely Prey Upon. So, for example, if a player were to cast Spare from Evil in response to Prey Upon, and their opponent's creature was non-human, then their creature would deal damage, and protection from humans would prevent the damage being dealt in return.
