1. If i declare an attack and my opponent doesnt block i can sacrifice creatures to boost the vampire right?
2. Lets say my opponent has a 1/1 with the same scenario and chooses to block. I pump Bloodthrone Vampire to 3/3 and he responds using Giant Growth can i respond again and pump her to 5/5 if i have another creature? or did i miss some timing.
3. Another one with Bloodthrone Vampire lol. Lets say i have 2 on the field. Do i need to sacrifice two creatures to make both of them 3/3 or does sacrificing one pay the cost for both.
4. Also when using Blade of the Bloodchief lets say i have two 1/1's and my opponent has 1. He blocks the one without it for whatever reason. Do i hit him for 3? or is it all applied at the same time and he doesnt get the boost until after the damage is done.
Sorry making a vampire deck and gonna be going to my first tournament so just trying to read a lot and figure out common scenarios.

Yes both players get priority during the declare blockers step
2. Lets say my opponent has a 1/1 with the same scenario and chooses to block. I pump Bloodthrone Vampire to 3/3 and he responds using Giant Growth can i respond again and pump her to 5/5 if i have another creature? or did i miss some timing.
Steps and phases don't end until both players pass proirity over an empty stack. Aslong as you have enough creatures you can keep saccing them to Bloodthrone vampire
3. Another one with Bloodthrone Vampire lol. Lets say i have 2 on the field. Do i need to sacrifice two creatures to make both of them 3/3 or does sacrificing one pay the cost for both.
Each vampire has a seprate activated ability. If you want them both to get the bonus you need to sacrifice a creature to each vampire.
4. Also when using Blade of the Bloodchief lets say i have two 1/1's and my opponent has 1. He blocks the one without it for whatever reason. Do i hit him for 3? or is it all applied at the same time and he doesnt get the boost until after the damage is done.

Assuming there is not first or double strike all damage is assigned and dealt at the same time, then the trigger from blade of the blood chief will go on the stack. At the point in time damage is dealt none of the creatures have gone to the graveyard so the unblocked bloodthrone vampire is still a 1/1.

1. If i declare an attack and my opponent doesnt block i can sacrifice creatures to boost the vampire right?
If you mean that you're attacking with the Bloodthrone, then yes, you can do this. However, if you are also attacking with the creatures you plan on sacrificing, those creatures will not do combat damage if removed from combat before the combat damage step (as of the 2010 rule change).
2. Lets say my opponent has a 1/1 with the same scenario and chooses to block. I pump Bloodthrone Vampire to 3/3 and he responds using Giant Growth can i respond again and pump her to 5/5 if i have another creature? or did i miss some timing.
You didn't miss anything. Once your opponent does something such as playing a spell or activating an ability, they will pass you priority. This can go on as long as necessary. There is always a chance to respond.
3. Another one with Bloodthrone Vampire lol. Lets say i have 2 on the field. Do i need to sacrifice two creatures to make both of them 3/3 or does sacrificing one pay the cost for both.
You can't use the same 1 dollar bill for two vending machines can you? Think of the creature you're sac'ing as the bill. Sacrificing a creature only pays the cost of one of the vampires.
4. Also when using Blade of the Bloodchief lets say i have two 1/1's and my opponent has 1. He blocks the one without it for whatever reason. Do i hit him for 3? or is it all applied at the same time and he doesnt get the boost until after the damage is done.
A creature doesn't go the graveyeard until state-based actions are checked and the game sees that a creature has lethal damage. Since all of the damage happens in the combat damage step, and then SBA's are checked, the 1 damage has already been dealt to your opponent and it's too late to deal 3.
last question, i can activate bloodthrone vampires ability in response to something like lightning bolt right? is there ever a time i wouldnt be able to?

Bloodthrone vampire's ability is an activated ability as such you can activate it anytime you have priority and there is no effect specifically disallowing you from doing so (ie: a spell with Split Second like Sudden Shock).
You will gain priority before any object on the stack resolves so you would be able to respond to a lightning bolt.

Bloodthrone Vampire has a bog standard activated ability so you can activate it at any point you have proirity and the ability to pay its costs. You will be able to activate it in response to the lightning bolt though if you only activate it once the vampire would only be a 3/3 and would still be destroyed by lethal damage after the lightning bolt.

So if i had Blade of the Bloodchief on my 1/1 bloodthrone and sacrificed a creature in response to lightning bolt that would make it a 5/5 and survive?
Blade of the bloodchief would trigger and resolve before the bloodthrone vampires ability so yes assuming your opponent does nothing to foul things up your vampire would be a 5/5 when the lightning bolt resolves.

I think it may be worth it to you to read an explanation of the stack. You can do any number of actions in response to a lightning bolt, including activating Bloodthrone Vampire's ability. Any triggered abilities that trigger after a spell is on the stack will resolve before that spell.
