Wizards couldn't print some of these characters because planewalkers used to be too strong to print. They did Freyalise in 2014 even though she is long-dead.
Speculation
Yawgmoth UBRG - Non-white - Grandfather of Phyrexia. Most evil villan in MTG. Now dead.
Urza WUBR - Non-green - Greatest hero in MTG. Urza has been many colors, mostly blue, but as a sorcerer, scholar, and artificer, non-green is the best bet. Now his head is part of Karn.
Lord Windgrace WBRG - Non-blue - A Panther planeswalker. In the story, he helped Urza defeat Yawgmoth. Then he abolished the use of artifacts in his zone of influence. Now dead.
Serra WURG - Non-black - In the story she mentions that black mana was totally foreign to her plane. Now dead.
Feroz WUBG - Non-red - In the story, he (and Serra) locks away Dominaria under Feroz's Ban to keep it safe. Now dead.
Many other great walkers to choose from for us long-time story people.
This would require that they do both 4c AND Planeswalker commanders again. It's not completely out of the question, but it seems questionable.
I'm also not sure I agree with your categorizations here. Yawgmoth was pretty clearly mono-black (AND was never a Planeswalker). Serra was a Planeswalker, but was definitely mono-White.

Yawgmoth - Monoblack as they come, also not a friggin' planeswalker. His inability to gain a spark was a major motivation for him becoming a villain with a god complex.
Urza - I don't even know where to begin with this one. Urza was one of the worst villains in M:TG, the only reason he is seen in such high regard is because his enemy was worse, and when push came to shove he joined Yawgmoth. Let's list his crimes, shall we:
- Nuked an entire continent rather than face a construct with his brothers face, effectively killing one of the oldest forests in Dominaria.
- Started an extensive eugenics program that led to, among other things, Vuel turning into Volrath and the Keldon's becoming violent greyskinned psychopaths (indirectly with that last one).
- Engaged in extremely dangerous temporal experiments despite knowing they wouldn't work, leading to a massive temporal explosion that killed hundreds of people, inundated Tolaria with pockets of slow and fast time and creating the Tolarian Time Rift.
- Collapsed a plane to power up a powerstone, killing thousands.
- Manipulated the Soltari, Kor, Vec, Dal, and Skyshroud Elves to rally behind Gerrard without the latter knowing.
- Inviting a psychopatic demonic planeswalker to his Titans for the sole purpose of having said planeswalker murder a child planeswalker so he would have an excuse to murder said demonic planeswalker to power up another powerstone.
- Outright murder Taysir when the Rabian called him out on his bull*****.
- Put a Phyrexian Heartstone into his Silver Golem, causing said golem to track glistening oil to every friggin' plane that it visited.
- Create an entire race whose entire purpose was to die meaningless deaths (Metathran) fighting a war to use as a distraction for his own.
Urza is a humongous <beep>hole, and is in no way a hero. Gerrard was a hero against his will, Urza, no. Just no.
Lord Windgrace - Primarily a black aligned planeswalker, we don't know enough about him to speculate what other colors he was aligned with. But blue and red seems like a safe bet as he is from the Burning Isles that Urborg is part of.
Serra - Pretty much a mono-white planeswalker. Elspeth is an expy of her.
Feroz - Primarily mono-blue, with some red. He was very big on elemental magic.

It's about time for the reserved list to die, for the sake of Vintage and Legacy (And Commander).
When you look at the premending list of planeswalkers, there are plenty of available ones... Most of the 9 titans could fit a 4 color card. They could very well make Arcades Sabboth a planeswalker and add him a 4th color, or make Piru a planeswalker.
If they actually are making 4 color planeswalker, then I guess they would spread them as much as they can throughout magic story, so Urza+4 titans is unlikely, I foresee:
-WUBR Urza is a lock.
-recent mentions whose colors we are not sure about like Ramaz are likely, Ramaz would extend temur to UBRG then I guess.
-Sandruu makes sense in BRGW otherwise I could see a cat like Terrent Amese, assuming catscouldbeatribalaspect of this deck.
-a dragon like Arcades Sabboth, Piru or a brand new one makes sense, Sabboth would be RGWU, adding red to previous bant.
-GWUB could be a brand new one, otherwise Vronos maybe.
Urza is a five color walker, has been forever. That said, it is possible for him to appear as a four color planeswalker in a commander product, although unlikely. He'd have an artifact focus.
Sandruu is UR with a minotaur focus. He is an Anaba after all. Black makes no sense for him.
The only one of the original elder dragons that was confirmed to be a planeswalker was Nicol Bolas, according to Bolas the rest are dead (but that does not preclude their reappearance in auxiliary products), but he is has been wrong before.
Vronos was White/Blue.

Minotaur were BR in Theros, that's enough to justify black, especially with a character we know so little about, expanding Sandruu to these 4 color fits I am sorry.
Urza has been asked for years now, that's why I think they would just jump and do him in such a product. So far he was depicted in all 4 colors but green (I am talking appearance in art, name and flavor text), and fits an artifact theme that fits mostly non-green colors since Mirrodin decided so. He probably could be considered all five colors back in the days, but saying he is non green fits greatly, he embodies no aspect of green and is certainly not the type to allow nature take its course.
Vronos you are probably right. They are going to make new planeswalkers anyway in that cycle.
Sabboth is the only non Bolas elder that was not denied as a planeswalker. That leaves the door open. My opinion here is that one among the cycle could be a 8 mana dragon like Bolas and Ugin, and if so, Sabboth is a possibility.
Regarding Sandruu, the colors of minotaurs in Theros have nothing to do with it. He is an Anaba Minotaur, and a friend of Serra and Feroz.
Urza was a planeswalker with full access to all five colors, he was also the most powerful walker, on account of having two sparks (his own and Glacians), no revisionist history will change this, as it would invalidate the connection he made with Yavimaya that allowed him to get and use the Weatherseed.
Arcades Sabboth could not have been a walker because of one simple reason: He was summoned by Leshrac in the demon planeswalkers battle with Kristina of the Woods.
