Getting four in the first set and one in the second is rather odd. It could be done, but seems like pushing one of them off to the second if we only get five would be a bit better.
If we do get a sixth walker, then the color math suggests a WB one, to balance out the other numbers.
Maybe an Aetherborn Planeswalker isn't off the table just yet.
There is mention on the "Notable Characters" page of Kaladesh of one Ranmir, Aetherborn Inventor who is not at the fair, but receiving notice for their work.

I agree that six planeswalkers seems like a likely number,
however,
that probably means that one of them is 3-color (Tezzeret?)
or colorless (Karn is also overdue for a check-in)

I'm more curious about the sixth person now. Things were actually set up in such a way that we could have five Planeswalkers in a way that really addressed the major players in the story without any real hassle, even giving us a couple extra guys who don't seem to be big movers and shakers of the plot (Saheeli being the most stand out, but probably Dovin too). It also seemed to address the color pie pretty well, working out to W: .5, U: 1.5, B: .5, R: 1.5, and G: 1, so I'm really curious how they'll wrap things up. White/Black has the most obvious gaps, so maybe we will see a new Planeswalker in that color, or a White/Green (or Black/Green) Planeswalker. But it's very weird.
I'm kind of doubting a tricolor now, if just because it seems really heavy on tricolors. We already had Tamiyo last set, we have an almost guaranteed Nicol Bolas next set, it doesn't seem like a tricolor is that important here. One every other block, as we've been doing since Tarkir, seems plenty often enough. Plus if Amonkhet has only five Planeswalkers then we're effectively down one non-niche Planeswalker, meaning it's fine if all six in Kaladesh are easy to fit into decks.
Edit: And, just double checking, using the criteria Wizards uses for color balance we've never hit 2.0 in a color. So Blue/Red are flat out for a new Planeswalker unless Dovin or Tezzeret are tricolor, and that only really solves Blue. Most likely the sixth Planeswalker is one of the two color pairings of Abzan or colorless, or possibly just monocolored White/Black (Green being unlikely given Nissa).
We could get a Monowhite Dwarf who is Boros overall. Though it might be confusing that they changed colors after only their second reveal, it wouldn't be the first (or the second, third, or fourth really) time that's happened, so I don't think there would be much harm in it. I really agree that they need a new Gatewatch member though, it's really annoying having just those five.
Option 1: There's a cycle in the mythics in Aether Revolt preventing them from having two walkers (or a walker in a certain colorset).

But don't feel right here.

One thing I have been thinking is that we might end up getting a non-humanoid walker as our "sixth" planeswalker card. Possibly a Sphinx as sphinxes are (a small) part of Indian myth (one they shared with most of the middle east, Greece, and Egypt).

I half expect Khuprix and Erebos to co-conspire against Heliod to find a suitable replacement for him that they have influence over and who dislikes the sun god. Like a certain white hero who died tragically. The God of Horizons did hint that he was way, way, way older than the other Therosian gods. Imagine it, a planeswalker that flips to a god as their ultimate, wouldn't that be something?

That would be pretty cool, though I have a hard time seeing them do a singular flip card. It would either have to be a theme of the set or some other way to represent it. Elspeth as a God of Theros would be something I'd like though.
I'd also settle for just two Planeswalker cards. One with her possibly as a Returned, the other post apotheosis. Could be color changing involved too, very different themes. We did get double Sarkhan after all.

I don't think we are getting another red walker again. They will be either white or black based on colour balance.
