Have any of the story writers at WotC ever actually studied the idea of time travel, to ensure that this story shall not be too confusing or ridiculous? I do hope so, so that the story feels believable and well-written.

I'm highly doubting Sarkhan will somehow time paradox himself out of existence. Either he will just happen to be born again in this new timeline, or, more likely, things outside of the plane aren't affected by the time travel. So basically Sarkhan and Sorin just have to step out for a moment and they'll avoid being rewritten.
The most plausible version of time travel I can subscribe to for Fate Reforged/Dragons of Tarkir is a multiple universes version where Sarkhan drags Ugin back to the "present day"...except the new "unwritten now" (i.e. currently active parallel universe version of Tarkir) is the dragon-filled one. Sarkhan "was never born" in the dragon-filled "unwritten now", but that won't stop him from existing.
Unfortunately, this means that Ugin died 1000 years ago in the current "unwritten now" filled with Khans and no dragons. With my theory, Sarkhan can't change that.
This may mean that the dragon-filled "unwritten now" version of Sorin never met Nissa, though, so things will get messy...
