Now that we have two cards from Theros spoiled with this mechanic, I'd like to speculate that we may be getting more. It's a very cool mechanic that we've seen previous iterations of, but not for a long time. And after reading the crazy thread about the color purple in Theros, I have a bit of a theory myself: this "mana of any color" mechanic is the purple mana mechanic.
Anyways, I think a 1 or 2 CC green spell with "The next spell you cast this turn has "You may spend mana as though it were mana of any color to cast this spell."" would be super cool.
I would guess that it could also be a nod to Commander players.Daxos would be rather worthless as a commander if cards he exiles couldn't be played because you can only generate W and U mana.
Sure we could see more (like 3 more) but we won't see a lot of them since people might start to get a little tired of muticolor and mechanics that support it.

I agree we won't see a ton, and I doubt we'll see the ability any lower in rarity than rare. It excites me though that this is a sort of "unmentioned 6th mechanic" for the block which makes me think it's an effect we won't be leaving behind in Theros. This excites me quite a bit.
I get the feeling that this was introduced in order to try and make the "grab a card from your opponent's deck" mechanic, actually playable. If this is going to become a mechanic we start to see more of, then it's kind of important that it's actually playable in more than just mirror matches.

but the main reason they've adopted this wording is so you can play cards your deck may not be equipped to cast when you steal them.

It's a way to let you cast cards from other players' decks while still having to pay their mana costs, not just getting them for free. Very relevant in Commander, where your mana is limited in what colors you can produce, but still very relevant elsewhere. A UB deck isn't likely to be able to cast many cards from an opponent's RG deck no matter what format you're playing.
At last glance, there are two revealed cards in Theros that make use of this mechanic, Psychic Intrusion and Daxos of Meletis. On the former I think it makes a lot of sense as an evolution of a fairly common stealing mechanic to make it more playable, but (for me at least) it seemed surprising to see on Daxos in WU. It seems out of place enough that I suspect we might actually see a cycle of 5 (one for each allied color pair) that allows you to somehow steal a certain card type from certain zones and pay any colors to cast it. The stealing element might not work for every color pair since it would feel a bit odd for red and green to do, but I think it's still possible.

It does feel like an attempt to fix Blue's 'steal a card' mechanic to make it viable in constructed. So having it on a lot of Ux cards seems like the game plan. I can somewhat see it in Black and Red, but black would run it from stealing out of the deck (like a crueler lobotomy) and red in the same style of Chandra's draw effect.

That doesn't work in EDH, which is almost certainly the impetus for this new clause.
It can also be mitigated in non-EDH formats with cards like City of Brass or Shimmering Grotto.
And agreed on how much I wish they had thought of this before Sen Triplets-
Then I wouldn't have Esper/Dimir/Azorius/Orzhov players *immediately* on my ass because the Triplets can play any card in their hand.
It'd be awesome if they got errata, but I seriously doubt it
