Rules question on the demon ninja: If my unblocked creature get's ninjutsu'd for the demon, does my opponent have time to play his or her instants before the ninja's ability would snag one of them? I think my opponent can do this, which makes the ninja's ability even worse for me. It should just have wrexial's ability.

He can, but it's a demon ninja man. You are usually surprising them, and usually taking their sorceries, not their instants.
Someone (I believe around page 3) mentioned that the ninja is not playable in casual. o_o

I can add it to a ninja deck for fun, I can add it to any Nezumi deck for fun, I can pair it in a Ravnica Dimir deck for fun, I can use all the tricks of the vintage cards and probably still rarely kill someone within turn 1-3 with it. Casual is for fun and can use almost any card there is, and efficiently- especially because efficient in casual could be a turn 60 kill even.

A thing to remember is that no one can do anything while an ability is resolving. That means the way it works is in this order:
If you attack with the ninja demon normally;
1. You attack with the ninja demon.
2. Your opponent decides what to block with.
3. If the demon is unblocked, your opponent has a chance to remove it from play with a spell or ability before the damage step.
4. Assuming it is still around to do damage, the damage is dealt and the trigger goes on the stack. It's too late to stop the ability from happening by killing the demon but your opponent can still counter the ability with a card like stifle. It's also the last chance for your opponent to use any instants or sorceries in his or her hand that he or she doesn't want you to use with the ability.
5. The ability resolves. You pick a spell out of any of the remaining instants and sorceries in his or her hand and can choose to use it. That spell goes on the stack.
Ninjutsuing it works like this:
1. You attack with your creatures.
2. Your opponent decides what to block with.
3. If you have at least one unblocked creature, and the demon is in your hand, you have from this moment until the end of the combat step to return the unblocked creature to your hand to put the demon into play tapped and attacking anytime you could play an instant.
This ability uses the stack and your opponent can counter it using a spell or ability that counters activated abilities. Assuming you do it right now, the demon is put into play tapped and attacking (and unblocked).

It's handy to remember that you can use ninjutsu anytime in combat after blockers are declared except when combat damage is resolving. You can bounce a ninjutsu creature with another ninjutsu creature in response to a kill spell, for example. You'll get the second creature's damage trigger if you do this before damage.

Since the number after devour refers to the number of +1/+1 counters the creature gets per creature sacrificed, couldn't you set x equal to any random number? There's no limiting factor. Or am I reading the original post wrong?

How i read your info is that , for each +1/+1 counter , it will get an additional one. You can just put digit number of devour instead of putting twice the effect (1,2,4,8,16, etc.) So, there no need for a X ability.
My idea was more something like this : You got two creature . one is 2/2 and the other is 3/3. Then, i play this mysterious card with devour 1 ( just for example) . He's entering the battlefield with 2 counter since he used his ability for the 2 creature. With the x/y effect ( read my last post) , you would have a 5/5 creature with 2 +1/+1 (so a 7/7)

I want to abuse that and like Pandemonium or something. Even Fling could be an instant kill if it devours enough. Timmy as hell but pretty cool idea. I foresee myself dying at least once to shenanigans revolving around it.
Unfortunately every try hard from Sacramento to Shanghai preaches from the top of their 27 lands + Mana Reflection that Tooth and Nail and Time Stretch are fine to play in the same turn but Armageddon is unfair.
