Duskfang Mentor has a triggered ability that triggers when a permanent (the Mentor itself) enters the battlefield. If you control Yarok, the trigger is doubled so you can put Lifelink counters on two different non-human creatures (or two on the same, if you want).
As a rule of thumb, Yarok cares about "when NAME enters the battlefield" and "whenever a TYPE enters the battlefield" abilities.

It's not a trigger.
There is no way to get both kinds of counters the way you want. At the moment Nipper enters the battlefield, you choose and get one counter, and that's it. To have both you use a card that gives the other one (like the Mentor).
