So my opponent has manifested a card from the top of their library, turning it into a colorless 2/2 creature. I cast Break Open on it, and it's a sorcery, which one doesn't matter. What happens to it?
Where in the comp. rules does it say that?
I could only find 304.4 and 307.4, which say instant and sorceries can't enter that battlefield, which doesn't apply here.
I'd guess that it remains a 2/2 intuitively, but I'd like to know for sure.

It doesn't. The current rules don't handle manifest; "manifest" doesn't even mean anything if we use the current rules.
A few older cards turn a face-down creature face up. If you manifest an instant or sorcery card, and one of these older cards tries to turn it face up, reveal the card and it stays on the battlefield face down.

And why the heck are you running Break Open in the first place?

What we do have is the Mechanics of Fate Reforged article on the mothership.
