Why not have it equipping another creature and ride that play to beatdown town?
I'm mostly just trying to better understand Tromokratis' ability.

I don't foresee it acting unfavorably but if they're blocking him it's with the whole team anyway, this just forces the issue.
I guess what I mean is if the ability resolves and they decline to assign the rest of their dudes as blockers he isn't blocked and hits a home run.
So, if I use Grappling Hook to "have target creature block it this turn if able", then it forces all of their creatures to block Tromokratis?

Yes, it does force them to block. When you're operating under different requirements and restrictions for declaring attackers and blockers, a legal declaration is one that satisfies the maximum number of requirements without violating any restrictions.
"No blocks" doesn't violate any restrictions, but it also doesn't satisfy any requirements. "Everybody blocks" satisfies one requirement, so that's the legal declaration.
Ok well that's confusing, since the grappling hook only requires the targeted creature to block "if able". You're saying I wouldn't have the choice to not declare other blockers just to save my guy by making him then "unable to block"? I know I didn't cite any rules but maybe we should.
Ok rule 509.1c seems to support what you're saying.
So final word: Rhadamanthus IS correct and I was wrong.
