The old Sorin isn't played because it's not very good. The new Sorin will get played in many decks he shouldn't because he's a new planeswalker and can be run with many cards that obnoxiously scream "hai gaiz you're supposed to build a deck around us!" Then he'll get played less once people settle on what decks he actually outperforms other 4-drops. This will likely not be many, because his colors are restrictive, and in decks that can run him, like Esper Control, there are usually cards that are better in his place.

Sorin Markov wasn't played because it cost 6 and triple black. It does see some play in Commander, but triple black is extremely hard to deal with unless your mono black. Sorin, Lord of Innistrad will see play because for one it cost 4, which is the magic number for a planswalker to really see play. It also protects itself by making a dude, but most people want it for the Emblem token. That being said new Sorin is more of a nitch card, not as bad as Nissa was, but not quite as good as a Gideon or Elspeth.
What others said- 6CMC is too much for a planeswalker to be constructed-viable outside of EDH.
He's also not very good at defending himself,
though I admit his abilities are quite fun.

I used to play the old Sorin in standard as a sideboard card against certain decks and he used to pull through once and a while. I one a few games with him, and that deck always performed well in tournaments.
Also I've had extensive experience with both in EDH now, and while the new Sorin is decent, the old sorin is amuch better card in that format, for the obvious reason that it immediately cuts there life down 20 or 30 points, and if it doesn't it still puts them in a nice corner.
I've been playtesting the new guy almost since his announcement, and what I'm finding is that he's not as threatening as people make him out to be, and with the color restrictions in mind, he's not actually a giant leap over the former sorin.
Sorin Markov saw some play, most of the time as a 1 of in UB Control sideboards (if at all). Like others have said, 6 mana is just to much (unless it's insane like Nicol Bolas/Karn, and even those only see/saw fringe play as 1 of sideboard cards in decks with 26+ lands). He probably would have been too good at 5 mana (2BBB probably would have worked however).

If you're talking about Standard, I think the format's a bit too fast for old Sorin, even if you're playing against control as well. At 6CC, his abilities are good, but not as immediately rewarding as the easier to cast Grave Titan or even Frost Titan. The other problem is that he's a very defensive card even for control. I think there are more efficient ways of dealing with threats than Sorin's +2.
Just to pop in, but four isn't the magic number anymore for a viable planeswalker. Five and seven are proving to be so, as Garruk, Primal Hunter and Karn Liberated can Constructively tell you. Both are in decklists; the latter typically a one of, because it DOES cost seven, but Garruk has been 2-4 copies worth, and triple green to cast too.
5 was always playable. The effect just has to be worth it.
Gideon saw play, Elspeth 2 saw play, old Tezzeret saw play, Chandra Nalaar saw play as an answer to Baneslayer Angel.

There is no magic number. The cheaper an effect is, the weaker it can be and be worth it. The more expensive it is, the more powerful it must be in the deck/metagame to be worth playing.
I would say that White / Black is actually less color restrictive than triple black, at least because we have so much good land.
Also, the best planeswalkers have been able to protect themselves; they make tokens, can use removal or both.
Old sorin did see some play, but since his removal was kinda weak, he didn't see much.
New Sorin has hard removal for a finisher, and can make dudes to protect himself.
