Maybe it's not even a counter which gives the creature it's on evasion or protection
Perhaps it's the exact opposite...a decoy (lure) counter
Isn't that ability considered "evergreen"?
What if "a character players have been requesting get a card for years finally gets one" and "Legendary Creature - Frog Beast" are the same? Anurids from Odyssey block were Frog Beasts, and Ambassador Laquatus had one named Turg. Laquatus was a Merfolk Wizard, too. Maybe he's the legendary Phyrexian Merfolk Wizard. Plus: I'd love to see Brushhooper get a reprint. Mystic Enforcer would be fun, too.
My best guesses for what the new counter is is either something like shield counters that grants some unique effect to permanents that works as a counter (freeze counters for tapping or detain type effects? counters you can spend to give a boost?) or as a marker for transformation and level up type effects (some sort of upgrade counters or something).
The only problem with this is that Ward N counters have a variable N which would be confusing to represent as how do you know what the value of N is? You could teace it back easily if the card specified "a Ward 3 token" but in the instance it was an X value, especially one determined by a mana cost, it would be all too easy to forget that you had Ward 2 counter when it benefits you to have a Ward 3 counter instead.
Ward stacks so couldn't it just be Ward 1 counters? Put X Ward 1 counters, etc.
The primary issue here is that ability counters aren't evergreen, so why would a specific ability counter be? Note that when asked what counters he would call evergreen, MaRo said "+1/+1," so it's probably not a counter of an evergreen ability that he's referring to.
This is exactly what I thought. I don’t think it’s a counter of an evergreen keyword, I think it’s a new type of counter that will appear in every set going forward, which is pretty interesting.
As for what it could be, there are plenty of possibilities, but I think we can make some assumptions.
First, the only two evergreen counters at the moment are +1/+1 and loyalty, which go on different card types. I think that’s significant. In the interest of keeping things easy to keep track of for paper magic, we can assume the new type of counter will go exclusively on card types other than creatures and planeswalkers, otherwise a set would most likely have to choose between using one type or the other. Considering “evergreen” means it appears in every set with few exceptions, I don’t think that the new type of counter will go on creatures or planeswalkers, at least not most of the time.
Given that, it’s most likely a counter that goes onto artifacts, enchantments, or players. I doubt it would be lands because managing counters on lands in paper magic is pretty annoying. If I had to guess, I would bet on artifacts. I would have said players, but one of the teasers mentions poison, and since we know that the counter will be new (I think someone commented about that), I doubt that a set that introduces a new type of player counter would also have an old one. I also don’t think that it’ll be enchantment, since sagas are already deciduous and are closely associated with their own counter type.
The alternative is that the new counter type goes on cards not on the battlefield, the way suspend uses time counters. That would mean we could be seeing a new mechanic similar to suspend.
Of course I could be wrong about all of this in which case we might be seeing another new type of creature counter or a type of counter that can go on any permanent. Either way I’m interested to find out what it is.
Going out on a limb here, but factoring in nostalgia, going to venture a guess that the Phyrexian horse is going to be a Nightmare variant, that's power & toughness are equal to the number of Phyrexian cards on the battlefield. It may also have flying, trample, or another typical evergreen keyword found on black creatures.
I would expect the Elemental Demon to be Lady Orca reimagined as one of the boxtoppers.
It would play to the theory these would be Legends I and Legends II characters.

Could the new evergreen counter be haste? Its the only thing that jumps out at me (other than maybe protection), but it also seems useless to be fair too so who knows.

keyword counters are deciduous. MaRo was referring to a new counter that will be evergreen, not a counter for an evergreen ability. Which we can confirm since when asked what evergreen counters already existed, he didn't list any keyword counters, only +1/+1 (and loyalty counters).

How i feel about competitive players and casual players in EDH: The competitive are german tourists, the casual are italian tourists, both in a italian beach. The italians asking themselves "why are the germans here?" make a legitimate question, the answer is because the beach is beautiful, no matter the country you came from. The italians wanting to ban the germans are dumb, because if the germans pay for their stay and follow the rules like everyone else, they have the right to be in the beach. Hovewer, if the germans started to ask themselves "why are the italians here?"... they would be dumb as hell.
