About time. Gush should have gone ages ago, and happy to see Daze go as well.

So many... Why so many? I can understand Gush, I can understand Daze, I can understand Probe, but all three at once?

While that is an accurate quote, it is out of context and doesn't answer the question considering "these three cards" refers to Brainstorm, Ponder, and Preordain. And none of those were banned so that quote is irrelevant.
I am guessing that they just felt that too much was being gained by all 3 cards. While the printing of Foil hastened the end of Gush, Git Probe has proven to be problematic in every major format Wizards produces a banlist for so that makes sense too. And they gave their reasons for Daze.
I am not sure if all 3 were needed to be banned at the same time, but it always seemed that Pauper was a "blue" format so this may be a way to try to cut down on blue's share and diversify the format a little more.

You misread that. They were referring to banning of brainstorm/ponder/preodrain and said they saw no reason to ban 1 because the decks tended to run 8 cantrip effects so if 1 was banned everyone would play the other 2. As they consider the filtering effects a key part of pauper they left it untouched.

What? Am I reading their reasoning right? Daze made all games less interactive and reduced play-around moments? Talk about a stretch there.
Gush of course was a needed ban, but not so sold on Daze, let alone Gitaxian Probe. They should've banned just Gush and maybe one or the other two and wait it out instead of doing such sweeping changes, specially since they're still spoiling Modern Horizons.
I am honestly a bit sad the see the probes go... There were such a nice addition to various decks and were pretty much the only format where you still could play 4 copies of it.
Also it is not really a blue spell. It is a you pay 2 life spell which happens to be blue.

Also, when did Pauper become so popular it needed a ban list? I've had pauper decks for ages and I've never met another person in a LGS that plays.

Pauper have a -at least online- banlist since the inception of the format ( Cranial Plating etc.). You definitely miss a lot of things meanwhile.
But still... So many.
