The problem with defining this format by what is "fun" is that everyone seems to define fun as what they don't lose to. If you keep losing to easily answered cards, that means you should improve your deck. If you don't want to improve your deck, then you should come to peace with the idea that you are going to lose because you chose to not interact with better strategies.
A sword that makes the equipped creature a Knight and creates Knight tokens when attacking? Well I know one of my favorite cards from M19.

Every time I read a comment about "Well if this card had card draw/trample/haste/indestructible/hexproof/life gain...", I think "You're missing the point." They're armchair developer comments that fail to take into account the card's role in the greater Limited and Standard environment. No, it may not be as good as whatever card you're comparing it to. There's a reason for that. Not every burn spell is Lightning Bolt, nor does it need to be or should be.

Also, what's with the bad artwork angles on a lot of equipment? I want to see the full sword in the art, not just a close up of the hilt at some obscure angle. I wish they made more artwork like the Sword of X & Y artwork where the weapon was clearly depicted.
"+2/+0" seems to be the stats on the sword. If the equip is :2mana:, that would be an ok card. It may be the time Wizards stops being afraid of equipments. This one would still be way below the X&Y swords in terms of power with such stats.

A quick search for 'mare' and 'horse' on gatherer shows that other than nightmare (*/*) all other 'mares have been 5/5s for between 4 and 6 CMC. I would be surprised if they broke precedent and deviated too far from either of those ranges.

I think equipment has the Mox problem - they are very hard to make well balanced for constructed, and a very good one could easily break or at least warp an entire format. This means that they make sure to err on the safe side, which again means most of them are clunky and unexciting.
It also doesn't help that they waaaaaay overshot the mark on power level in Mirrodin block (because they were thinking of them in terms of how powerful enchantments needed to be to see play), and so equipment since that point has had to live in the shadow of the Swords cycle and sundry other extremely powerful equipment.

I'm not sure where you're getting that from. Crested Sunmare, Thundermare, and Timbermare fit your description, but Spitemare, Wispmare, and Vryn Wingmare certainly do not.
I think that the possibilities are wide open.
