Well, don't see why putting him to 6 wouldn't work as regular. You just move to the numeral to the left, so ideally, you would go to 5 after casting a 6.
The real trick is changing the "When the Doom Counter moves from 1" to "moves from 2" when he's at 1 and about to blow up someone. Now he's at 0, doesn't blows up and can't go back.
Plus, the bonus hilarity on the fact that this way he can count down to negatives.
If you want to be decidedly unfun, and argue there is no six for Baron Von Count's doom counter... why are you playing an Un set?
Otherwise most interactions just mean that the number on the spell being cast no longer matches the number on Baron Von Count so the effect would just fizzle that time and the Baron Von Count player would have to try again later.
Although on that note, I also once accidentally gave my opponent infinite mana in an Un-draft by playing Look at Me, I'm R&D with all instances of 1 changed to 0 to get rid of a bunch of 1/1 tokens. Then my opponent played Mana Screw, poured that mana into a Mine, Mine, Mine! plus a Letter Bomb on the same turn.
You can use it to make Nicol Bolas, Planeswalker, Tezzeret, Agent of Bolas, Tezzeret the Seeker, and Nissa, Vital Force ult the turn they come out. Kinda useless, but fun.
You can really mess with Ral Zarek's ult in a variety of ways.
You don't call "dying to removal" if the removal is more expensive in resources than the creature. If you have to spend BG (Abrupt Decay), or W + basic land (PtE) to remove a 1G, that is not "dying to removal". Strictly speaking Goyf dies to removal, but actually your removal is dying to Goyf.

You can fix it by casting 5 copies of More or Less in response to the first copy being cast, and change it's flavor text into "Why was 6 afraid of 7?
Because 789." Of course, then you'll have 5 copies of the card on the stack with a flavor text that doesn't make sense, so maybe that only makes it worse...

In the flavor text 5 is afraid of 6, not 7 which is why I it wouldn't make sense for 5 to be afraid of 6, who in your version is actually the victim.
