First off, there's obviously multiplayer. Additionally, the option to do so more than once puts the opponent in an awkward position: every time they get your life total below theirs but don't kill you, you'll just swap on the next upkeep. For example, lets say your opponent has beaten you down to 12, but is still at 20. You play this, and next upkeep swap to put you back to 20. A couple turns pass, and they've beaten you down to 5 or 6. Well, you can swap again, to go back to 12 at least.

The reason for using it more than once is to ensure that you always have the highest life total. Even in a deck with no way to gain life, any time your opponent's life total is higher, you can swap. Then they'll hit you again, and you'll swap again, and still be at a higher total. This also makes it a repeatable source of life gain/loss for cards that care about that.
I'm not sure what deck it wants to be in, but multiple switches isn't a bad thing.

Politics, or if u are playing casual u may want to manipulate the life totals for things like fatefull hour, or bait a suicidal attack when u have some protection to prevent the loss
Anyone else remember back in the day when Mirror Universe was restricted?
I do. Different times, much different game then. To be fair though, there wasn't a whole lot you could do about resolving a Mirror Universe outside of Disenchant which was played maybe as a 1 or 2 of in your 60 card decks (or more than 60 card decks at the time).

It was, though from the blur and the fact that it wasn't in any of the less-blurred close-up portions, its exact name, cost, and precise text was unknown. It was mostly known to be a noncreature, nonplaneswalker, nonlegendary, nonaura white card, and was largely suspected to be a enchantment (based on the length of the word that could be seen on the type line, and that there were clearly no subtypes or supertypes)
Say what now? I didn't do all the work to get up to 100+ life in Ayli, Eternal Pilgrim just to hand that off to someone else
(though it does make a funny wincon with False Cure or the aforementioned Tainted Remedy).

Yeah, and in a lot of ways, this is even closer to it than Magus of the Mirror or Soul Conduit.
