Why can't you just activate it with your upkeep abilities on the stack?
You can. But, as has been discussed, you can't copy something with an upkeep trigger to get another upkeep trigger. The "Beginning" of the Upkeep has already passed by the time you can make a copy so the Mirage Mirror will not trigger.
I guess that explains that wording. I've always wondered about the phrase "beginning of your upkeep." After all, nothing specifies the "middle" or "end" of the upkeep, so why bother with all the extra phrasing? So it's to prevent abuse of upkeep triggers?

This is veering off-topic, but no, that is not why. It is because there is no definable "middle" or "end" of a Step. There isn't any way to define it since players can keep doing stuff. For example, if something triggered at the End of the Upkeep and then someone responded with a Stifle, then you aren't really at the end, are you? Since the spell will resolve to counter the ability and players will still be in the Upkeep, how could that have been the end of the Upkeep since you are still in the Upkeep. The middle is even harder to define.
In fact, there are cards that originally triggered at the end of steps that were errated to the beginning. Since the beginning is always the same time every time, they choose to always have abilities trigger then for abilities that trigger in certain steps.

I dont think that was their intent. I think it was just a housekeeping thing.

I think it may also have to do with the fact
that the beginning of your upkeep is the first time you can take any sort of voluntary action on your turn.

So does Scion. Which is why you have to activate him twice before passing priority. It'd be the same with the mirror.
Oh but yeah you can't copy, do something then copy something else.
Could you copy Mirage Mirror with Mizzium Transreliquat, activate the MT's copy ability targeting itself, then in response activate the copying ability it copies from the Mirror, use any activated abilities of whatever else it copied, then have it reset itself to being a copy of the Mirror?
This wouldn't work unless you could already use Transreliquant on whatever you're copying, because the "target artifact" is checked on resolution as well. So if the mirror's ability would make it not an artifact, it gets countered on resolution.
I just realized you can stack multiple activations. I don't know yet how to exploit this (activating different abilities of differents cards obviously), but that looks promisingly fun.
Profit. Well, as much as you could hope to profit from a 3-card combo involving at least 7 mana this turn and likely more earlier to have even gotten here.
Am I missing something? Why has no one mentioned this with Anointed Procession and Hidden Stockpile in the tokens deck that is fringe tier in Standard at the moment?
Someone at my Duel Commander group mentioned this can go infinite with Cabal Coffers, but you need seven swamps or so I think.
So tap Coffers for 5 (7-2), then use two of that for another 5 (8), then + 6 = 14 etc. etc. There's probably easier ways to do it, dumb card.

How does it go infinite with Cabal Coffers? Let's say you have 10 swamps. You tap 2 swamps and Coffers to get 10 mana. You use 2 of that mana to turn this into a Coffers. You now have 8 mana, 1 tapped Coffers, and 1 untapped Coffers/Mirror. You use 2 mana to tap the Coffers/Mirror to generate 10 more mana to bring your total up to 16 mana total and 8 untapped swamps (so 24 mana total I suppose). That is a fair amount of mana, but now you have both Coffers tapped. Where is the loop that is generating more mana in this case?

God I hate the template that's tied to this effect. It's not "a copy". It copies. It copied something. It didn't become a new thing. There aren't "copy permanents". The ontology is all wrong.

That is amazing with mana up. Pay two to copy, say, Invisible Stalker, go to combat and attack, then after blockers are declared, pay another 2 two become, say, Blightsteel Colossus to kill someone via infect. Tons of shenanigans here!
That doesn't work. It doesn't retain the activated copy ability once it becomes something else.
It does work if you change it to Blightsteel after it fails to be blocked.
No, it doesn't. You change it into Invisible Stalker and it loses the ability to copy things. Once your opponent declares blockers, you no longer have the ability to change it into something else. The only way to change it into multiple things in one turn is to activate the ability in response to itself, but at no point will your opponent declare blockers before the abilities all finish resolving at it loses the activated ability to change into things.
Profit. Well, as much as you could hope to profit from a 3-card combo involving at least 7 mana this turn and likely more earlier to have even gotten here.
I like the idea of using this as a method of exile in EDH.
My playgroup group has 3 Mimic Vat so the way I see it (correct me if I'm wrong), you can using the resolution check order copy the mimic vat, kill a threat/recursion creature, put it into your copy mimic vat and when it turns back the card in it is gone.
That, and the fact that it can also duplicate Hidden Stockpile or Anointer Priest if a particular situation calls for it. Anointed Procession 5-8 is the biggest part of that though, that deck hits critical mass when you have multiples of Anointed on the board from what I have seen.

MTGS Wikia Article about "New World Order"
Every time I read a comment about "Well if this card had card draw/trample/haste/indestructible/hexproof/life gain...", I think "You're missing the point." They're armchair developer comments that fail to take into account the card's role in the greater Limited and Standard environment. No, it may not be as good as whatever card you're comparing it to. There's a reason for that. Not every burn spell is Lightning Bolt, nor does it need to be or should be.
PSA to everyone who keeps forgetting about the Reserved List:
You're on a website dedicated to talking about MtG. You're only a few keystrokes away from finding out what cards are on the Reserved List. You're also only a few keystrokes away from finding out why some cards on the Reserved List got foil printings in FtV, as Judge promos, or whatnot, as well as why that won't happen again. Stop doing this.
I know that no one is playing MUD in legacy, but this one is great:
copy cloudpost, metalworker or grim monolith for mana, Lodestone golem in enemies turn or any good thing at opponent field and any big guy when go for attack.

you could clone it its just the upkeep phase already passed on is the problem,
to get another upkeep trigger you need paradox haze because it does it again so you get three triggers
Activate Mirage Mirror targeting Blightsteel Colossus
Activate Mirage Mirror targeting Agent of Horizons
Let second Mirage Mirror activation resolve; Mirage Mirror is now an Agent of Horizons
Activate the ability of Agent of Horizons
Let the activation of Agent of Horizons resolve; Mirage Mirror is now an Agent of Horizons with quality "can't be blocked this turn".
Let the first activation of Mirage Mirror resolve. Mirage Mirror is now a Blightsteel Colossus with quality "can't be blocked this turn".

I think he meant it becomes anointed procession 5-8.
Its blue because of the lazotep transformation. So it shows that the minotaur potential is to become one of the Nicol Bolas` Eternals.
