Yes, if you steal a vehicle with this you will still need to crew the vehicle before you can attack with it.
As this spell just gives you control of the vehicle. It says nothing about making it a creature or anything.
Which is why you will want to drop that 2-drop creature to help you crew the vehicle you are joyriding in.
It doesn't die, it exiles itself. The flavor is that it jumps back into hiding behind her (or up her sleeve, or in her pants, or inside her hat, or wherever mischievous monkeys go when they aren't attacking)

So she's fifteen, has a cool animal companion who always survives, and is a revolutionary sky pirate with her own ship (and probably a ragtag crew)? Not only does this REALLY sound like a Disney movie, it sounds like a damn good one.
This is really cool just on the art and the sky pirate flavor alone (I guess Kaladesh is that sky pirate world I've been asking for after all).
Also, I'm the kind of person to usually do this, but Kari Zev is fiiiine.

And here is the actual cube, meant to be drafted in 4 regular sized packs. (60 card decks)
Either she should have flying or her monkey-producing ability should be on tapping (i.e. when crewing a vehicle) rather than on attacking. She still seems like a good card though. Not sure where I'd be happy taking her in draft - perhaps she's a top 3 or top 5 pick?

Yes, 3 power and 3 toughness for two mana is not good enough. She needs to be better. Flying would be perfect because humans usually fly. I think she would be a good 7th pick in draft.
The problem with defining this format by what is "fun" is that everyone seems to define fun as what they don't lose to. If you keep losing to easily answered cards, that means you should improve your deck. If you don't want to improve your deck, then you should come to peace with the idea that you are going to lose because you chose to not interact with better strategies.
If you don't cast Kari Zev herself via her Expertise, the next-best creature to grab is probably Forerunner of Slaughter. It has a power of 3 so it is able to crew almost every vehicle you may have or have stolen without any assistance. No, wait...Veteran Motorist--okay, that makes two really good options, both with power 3 (and the motorist gives the vehicle a +1/+1 boost).
