No. Exchanges don't occur unless both sides remain valid.
701.8a A spell or ability may instruct players to exchange something (for example, life totals or control of two permanents) as part of its resolution. When such a spell or ability resolves, if the entire exchange can’t be completed, no part of the exchange occurs.

I'm pretty sure, in that case, the game would see nothing to exchange for their permanent and thus their Emrakul (or whatever you were trying to steal) will just sit where it is. Nice try though.

So, since you sac'd your thing in response, it won't be a legal target when the spell resolves and thus the spell will fizzle.
