There is an immeasurable amount of possible symbols... they are not going to run out in this century.
Apparently they are already running out of symbols judging by the last few expansions.
This is Theros people! A block oozing of flavor and what we got? Some random scribbles as expansion symbols? Good God, I could think of better symbols depicting Greek mythology in less than 5 seconds which would both be recognizable by your average Joe and had some connection to the block.
If they continue this path, why even have expansion symbols?

No, you are not reading it correctly. People aren't worried about Wizards running out. But they are worried about the increasing difficulty it takes to determine what set a card is from.
I can tell the difference between Alpha and Beta, Unlimited and Revised, 4th and 5th edition, but I still have a hard time figuring out some sets based on their set symbols.

Right, and the good thing about those symbols is you can actually say Gears, Hammer, Flask. Try doing that for the Shards block, Zen block, Inn block, ect..
It's funny you say this, because I know them by their symbols over the names, since they all start for Urza.

They clearly have a reason for it. Maybe they think the cards look better with abstract symbols than with a knife or a tombstone (I agree). Plus, I don't understand the arguments for recognizable objects making it easier to remember which expansion the card is from. If I picture Innistrad, I can picture the symbol. It's no different than remembering that Innistrad was a zombie face or whatever. The Innistrad symbol is recognizable as the Innistrad symbol. The new player argument is silly. They're not any more likely to be able to correctly identify a card from a particular set in Mirrodin block than they are to do it for RTR block.
The people that complain about the people that complain about set symbols are likely the same people that put the bare minimum into their jobs. They can be described as "complacent."
Wizards print good rares, players complain about cash grab. They print underwhelming rares, players complain that the cards suck. They spoil the best cards first, players complain about the insane prices of preorders. They spoil the meh cards first, players complain that this is the worst set ever.
So. I think I understand now.
As far as these forums are concerned, WotC can never do anything good because:
Card that is new and probably good = "pushed"
Card that is new and probably bad = "EDH/casual fodder"
Card that is a reprint = "lazy"
Card that is a better version of an older card = "power creep"
Card that is a weaker version of an older card = "worthless"
