I believe that Elspeth shall remain mono-white just as Jace, Chandra, Liliana, and Gideon are all bound to remain mono-colored as well; each of them is a poster child for their respective colors, and none of them have any traits of other colors.
As for where Elspeth shall be located on Theros, I believe that shall spend a significant amount of time in Meletis, since that polis, with its focus on structure and diplomacy, seems to be the most closely-associated with her own philosophies; Akros is too fierce and competitive for her, and Setessa is too wild and unorganized for her, as well.

Not... exactly, but kinda maybe.
Ajani doesn't really do enchantments for his cards. He deals with +1/+1 counters and life gain/life matters.
The one that really sticks out there is Ajani's Chosen which... kind of makes NO sense with either his cards or his peripherals. The only one that it even interacts with is Ajani's Mantra.
I think it's more a flavor choice than mechanical. Ajani is all about helping other warriors, and so his Chosen follow the same philosophy. Empower others. (AKA reward YOU for casting spells that boost others power)
Ajani probably could use auramancy, but it seems unlikely.

IDK why every one is talking about ajani.... Elspeth is do to make a come back and Im pretty happy honestly. They could easily have a new walker that is GW (way over do) aura based and new mono white Elspeth. We had both Jace and Rall in RtR. Are GW and UG the last unused color pairs for walkers?

... You're confusing the reason Garruk had black with a conscious choice. Garruk was cursed, he had no choice in becoming another color. If Elspeth is going to change color to one of the ones we know she uses, THAT would be a voluntary change.

I'm aware of how the change occurred. My response was mostly in regard to this section: "...each of them is a poster child for their respective colors, and none of them have any traits of other colors."
Garruk was and arguably still is green's poster boy. He was still given black for storyline reasons. Regardless of conscious choice, it's still a relatively unexpected change considering we've got a Garruk before and after Relentless/Veil-Cursed that are mono-green, and that storyline has yet to be resolved.
Er, I'm babbling. Anyways, simplified, stating that a Planeswalker is gonna be a certain color or colors is plausible, but we've had exceptions to the "poster child" rule, and Elspeth is "from" a multi-color plane to begin with.
Not as much as you might imagine. It's important to remember that Ajani's abilities were much lower than some of the others to start with. Chandra, for example, has a huge amount of raw power. We know Elspeth is incredibly strong too, even if she didn't use it often.
Then there's Sarkhan, who can turn into a freaking dragon.
From what we've seen I'd say it seems Chandra and Tezzeret who have the greatest potential for power, while Jace, Elspeth and Gideon have a high baseline power and the rest are either specialists or hit and miss with their powers, experience and understanding of the might they hold.
Sorin and Liliana are still more powerful than either tho, but then again, they're meant to be pre-mending.

Sorin and Liliana are still more powerful than either tho, but then again, they're meant to be pre-mending.
Tezzeret is actually a barely passable mage. Even with his etherium enhancements, he still comes in at the bottom of the curve, but without them he can barely conjure a shadow.
Where Tezzeret's strength lies is in his ability to plan and build. A lot like Urza in that regard. He's brilliant, but he's not a prodigy like Jace.

He really doesn't have that much potential. Magic isn't where his strong suit lies, that's a huge part of his character. He's a mechanist, he builds and designs and plans.
It should also be noted that it wasn't Bolas's design. It was Liliana's design. She went to Bolas with the plan to unseat Tezzeret from the Consortium, he agreed to support HER plan. She offered him the Consortium in exchange for dealing with her demons. When the plan didn't work out, Bolas tried to pitch his own version of the deal, but Lili didn't want to trade one master for another.

She believes that with the Gods on the plane, she won't be called to be a hero, but eventually she slays a Hydra like it is no one's business and attracts Heliod's attention.
