So looking at the new Hours cards, I had a thought, based mainly off the flavor text of Chandra's Defeat.
Bolas isn't just taunting here, he's pretty much dead on. Chandra is pretty much a one trick pony as far as storyline goes. Burn things. Burn more things. And then burn even more things. When she loses her fire's effectiveness (as she did vs. Baral) she's utterly screwed. So maybe this triggers Chandra expanding her magical horizons a bit, branching out into another color. And then I realized that Nissa already HAS branched out, going simic in the next set.
So maybe this is a portent that every single member of the Gatewatch is going to branch out into another, likely opposing color?
Nissa's already in blue.
I can see Jace going into red, and using that color's emotional manipulation a bit.
I can see Chandra going into white, and taking advantage of either White's exiling mechanic, or its "Holy Fire" tendencies (damage to attackers, revenge damage, etc)
Liliana could very well go into Green, and add a golgari-ish "Cycle of life" element about her.
Which would leave Gideon going into black... which is the hardest one I see happening. Or maybe Gideon stubbornly refuses to branch out, which eventually leads to his death?
Chandra going white would be interesting. She can already cast Ghostflame, what if she learns to 'cast' white mana in flame form like the Purifying Fire?
Any reason why you thought just of enemy pairs instead of an ally for one? Gideon could always use more of that giant green growth. Why wouldn't Jace go more into white's order while he's the law of a plane?

Mostly because Nissa went into enemy.
BUt this makes sense too.
Gideon into Green to become stronger.
Nissa into Red because that's the other big elemental color
Chandra into black for more destruction, and highlighting her recklessness.
Liliana into Blue for the mental manipulation.
Jace into white cause he's DA LAW.
Personally, I've always seen Gideon as RW. During the first battle of Sea Gate he was incredibly reckless and just charged in without a plan, causing mass loss of life. He's very passionate about protecting the people he cares about and acts on his gut. Mechanically, I could easily see him start doing some Reflect Damage effects, redirecting damage to attacking creatures and the like, and he's already goaded creatures before.

Its also worth noting that Gideon's Amonkhet Planeswalker deck was red/white. Nissa's Kaladesh PW deck was green/blue, which she in fact branched into officially in Amonkhet, so it could be hints. Chandra's PW deck was also Red/White in Kaladesh, while Liliana's was Black/Green in Amonkhet.
IN the end though, I was more entertaining the idea that the Gatewatch would expand into two colors at all, not necessarily predicting which ones. It sounds like its definitely a possiblity.
I think there it is very possible Gideon could be B/W - but for a different reason. So there is a lot of foreboding that he will die. But that does not mean he can't come back. Here is my thought - the whole point of the trials is to ensure that the Lazotep zombies are in prime fighting condition. Of all MTG characters, I'd say Gideon is one of the most well known for his beefiness and fighting capabilities - as well as his leadership capabilities.
I think Gideon will die, and then Bolas will turn him into an Eternal - using Gideon's leadership and raw fighting power to lead his new army. The eternals we have seen appear to keep a semblance of their old power and characteristics, which means Gideon would be right at home here. He would probably lose his spark, which means he would be represented by a creature card. Imagine a black (or maybe black/white)Gideon zombie creature named Gideon, General of Bolas, or something along those lines. That would be insane.

Why bother with Eternalizing him when Bolas can simply enslave him? Bending other planeswalkers to his will is nothing new...
Well, it seems like Eternalized creatures are more powerful than non-eternalized creatures. Besides that, Tezzeret is kind of annoyingly rebellious at times to Bolas - a zombie just seems a little easier to manage. Besides, what skills/abilities can a non-eternalized Gideon offer that an eternalized Gideon could? He isn't a diplomat or an infiltrator in any way - he is solely a fighter/military leader. Sure, an enslaved Tezzeret or Jace could bring a lot to the table as non-eternalized enslaved planeswalkers, but Gideon? It's not like he would be used in any way besides fighting/leading. It just seems to me that eternalization makes more sense than enslavement.

Remember when Gideon had hieromancy? Yeah, me neither.

The spark. Finding a suitable soldier or leader is far easier than finding a planeswalker, erasing his spark would be pretty wasteful.
I think it would be cool to see some of the Gatewatch branch out in new directions, but I don't think they all necessarily need to. One thing you can say about most of them is that in many ways they embody their respective colors, so I think that barring character development it would weaken the characters for them to suddenly gain another color. I'm not saying it can't happen, and I like how they used Nissa's participation in the Trial of Knowledge to give her a connection to Blue. If they do dual color more of them, they should probably do one per world/block with something in that world forcing the character to change or face some aspect of themselves.
Gideon will add red if he adds a color. He's been a part of RW factions twice now: the Akroans and the Boros. Plus his personality leans in that direction.
Jace should definitely go WU. On Ravnica, he is the law. Literally. Plus he works closely with the Azorius. And his personality has been leaning towards WU since RTR (before that he leaned UB).
Liliana could add any color tbh. She seems to be getting less selfish and immoral, which might imply WB or BG. But she also might add blue because Innistradi zombies are UB. But the Onnake are red aligned so if (when) she unleashes the power of the Veil, I would not be surprised to see a BR possessed demonic Liliana card.
Chandra would probably be RW based on her personality. But she really seems best in mono-red. I don't think there's any reason to assume that all of the Origins 5 will have to add a new color.
Nissa, of course, is GU.
If I had to make a prediction it would be:
*RW Gideon for Return to Theros
*WU Jace for Return to RTR
*BR Lili whenever they resolve the veil subplot
*Chandra doesn't add any colors
Well, Chandra has already mastered Ghostfire, perhaps she learns more Colorless magic from Ugin inorder to fight Nicol Bolas, since he was winning when they fought, he might have some insight on how to defeat Bolas, and Chandra is a natural choice. (Flavor wise she has to have a <> to cast).
Gideon would definitely add Red to his color as he has history with RW factions.
Jace, White makes sense with his connection to Ravnica, but I could see him adding Black, particularly if he follows Liliana
Speaking of, Liliana could be the one to add Blue to her colors as she embraces a more, intellectual side or need for more knowledge to figure out Raven Man and/or defeat her last Demon.
and Obviously Nissa has added Blue to her's, while Ajani is already W/G
