Avacyn was killed by Sorin in SOI, right? So it stands to reason that she could be brought back as a zombie, since her corpse was sorta left there. With Liliana going around resurrecting everything in sight, couldn't Avacyn have also been resurrected?

Given that she has not left any physical remains, no. If anything, then as incorporeal undead (wraith, spectre). But because she was essentially a very peculiar type of mana construct, and Sorin vaporized/dissolved her altogether, then even this is highly improbable.

If, and I mean IF, they decided to bring back Avacyn somehow, the most logical way to do so would be to use the built in system of... I dunno, recorporalization call it, that they have for Demons on Innistrad. One could argue that while Avacyn wasn't a naturally occurring angel, angels are merely constructs of (mostly) white mana so she was angel enough to return to the planes' natural cycle.
Now, if they stuck with the current functionality of the plane, new angel wouldn't be Avacyn. Mana returned to the system is incorporated into new beings, not reformed into the old ones, but it's possible some semblance of the old Avacyn could still be in there.
Or if they really, truly wanted to bring back Avacyn herself, they could handwave that away as Avacyn being a special case.
I could see her returning the same way black mana coalesces back into Demons on Innistrad. She was ultimately a super collection of white mana after all. This hasn't been shown to occur with Angels on Innistrad, but an event gave birth to Sigarda and her sisters, so who knows. Perhaps when Sorin siphoned the white mana necessary to create Avacyn into Innistrad, dissolving Avacyn never cause it to exactly leave? Bringing her back would have to be a pretty roundabout way of doing it, because as others have stated, she was dissolved, her creation spell ended, not killed in a traditional sense.
As others have said, no because angels are incarnations of white mana, just like demons are for black. This explains why we never see undead angels or demons.
I do wonder if one day we might see a plane where angels and demons AREN'T mana constructs and are instead biological creatures, kind of like how vampires are typically undead but not on Innistrad.
