Not to mention the fact that no small percentage of the surviving humans have now been warped into Eldrazi and are killing the others. I really don't see how humanity can bounce back after this. Even if Sigarda becomes the new Avacyn like people are speculating, the population may well have dropped below replacement levels. Certainly at below the point of having a stable gene pool.

Instead of using planeswalker numbers to determine population, a better idea would be to use something that's not story-dependant. We know that Innistrad (At least, the part of the plane we have seen so far. IIRC it was said before that the plane is actually bigger) is just a little larger then France. Medieval France had a population in the range of about 5 million inhabitants during the early-mid middle ages, which seems like the best fitting time period for me.
Now all that would be left is to try and determine the population density compared to historical France and we'll have a rough number.

Even if we assume Innistrad's population prior to the events of Dark Ascension was around 5,000,000 - which I think is overly generous - that number would have to include both vampires and werewolves, as one has a human-equivalent society and the other spends half their time as humans. Let's say 3 million were actual humans, then. If we assume that only half of that number died/remained human during Avacyn's disappearance, her later madness and betrayal of humanity, AND Emrakul's invasion of the plane - which, again, seems overly generous - we end up with a total population of 1,500,000.
As of 2015, Rhode Island had a population of 1,050,000. Innistrad's screwed.

Keep in mind that the Werewolfs would kill lots of Humans and transform humans, some of them would die to the Carthars and the militia. The Vampires would Feed more being a huge factor on mortality and its population would increassing in a really small rate, would kill and be killed by Carthars. Taking in acount a 3 children/couple We would rougly end Up with a stable population on Innistrad ( not counting on others continents on Inistrad, Snapcaster, werewolfs that i can't remember the name ).

From the point of view of the humans They where almost extinct ( the population on the Big Cities would Grow While the small and less protected Cities would loss population, emigration, kills) (soo for the people still living on Smaller cities humanity was At peril of extinction.

It seems very unlikely that half the population is dead. That's what you'd expect for something like dropping a nuclear bomb on every population center on Innistrad (indeed the bombing of Nagisaki killed significantly less than half the city's population). Innistrad's people are notably hardy. I'd say no more than a quarter of Innistrad's population prior to Dark Ascension could have been killed since society is obviously pretty intact even after EMN.
Also, even if after the events of Eldritch Moon the human population of Innistrad drops to ~1,000,000 (a number I'd consider low), they're perfectly fine from a species survival standpoint. The human population of actual, real-world planet earth went through a catastrophic bottleneck about 70,000 years ago where there may have been as few as 10,000 humans left alive (!), and it's not like those survivors didn't have large predators and dangerous conditions to contend with.
Obviously our species recovered; a million individuals is positively luxurious for keeping the species alive. Now, if Emrakul really does result in most of the population being killed off, Innistrad's civilization is likely to collapse and take a long time to recover, but the humans shouldn't die off.
Also, we don't really know how ubiquitous Emrakul's mutations are. We know they're widespread, spreading through leylines across the plane, but we don't know enough about that leyline network to say how dense it is. It's possible that there may be large numbers of people living in areas not immediately affected by Emrakul, who'll be safe from her influence and her spawn as long as she's imprisoned quickly enough.
I mean, they're a fantasy invention, so they can have whatever geometry and physics the plot calls for, right?

The term "ley line" is, as far as I know, from the 20th century, and the fnatasy-relevant understanding of it dates from the 1960s.
Ah, never mind, thinking of something else that is reminiscent of ley lines but apparently not tied together. Can't find it right now though, phone. It's tied to feng shui though.
