So, on Dominator Drone we see an eldrazi controlling the body of a vampire. Is it really mind-controlling the vampire, or is it just kind of puppeteering the vampire's body? If the first, how much of the vampire's mind remain? Does it keep previous memory? If the vampire were, say, a planeswalker, would it keep the spark? What do you think?
I believe I read somewhere that this kind of behavior was seen in Zendikar block, but back then I did not pay much attention to the lore... Anyone has a source on this?
I think we've only seen it in vampires so far, at least in BFZ. Drana's UR possibly sheds some light on that, as apparently Zendikar vampires are tendrils of Ulamog that detached and have formed their own consciousness or something like that.
We have seen it back in the original Zendikar, but the only card showing it on vampires was Pawn of Ulamog, which doesn't show anything like the cards today. Back then the vampires were not former Eldrazi but a slave race to the them, in some storys sold to them by Sorin. Someone correct me if I’m wrong, but as far as I remember they used them as sort of mana battery or something, they gave them hooks to attach to and suck from them what they sucked from others. Funny enough if we look back at the way they made new vampires it's like wizards already thought about something, if we look at the nulls they make if a non bloodchief vampires feeds they are hungry, faceless killing machines, only thing missing would be the plate that the new vampire slaves show us

So what I think is depicted on Carrier Thrall and the new Kalitas is not an "Eldrazification" but more like and evolution back to be more like they used to be as Eldrazis. Dominator Drone on the other hand is simply using the vampire as a "ride" I think, completely controlling him.

It's not entirely clear. The most likely story is that the 'headcrabs' are how the Eldrazi assert control over 'created' vampires.
Only Bloodchiefs can create Vampires. Vampires can only create nulls. The Nulls REALLY should have tipped us off in the first place. Look at Escaped Null. Blank face remind you of anyone? Ulamog, perhaps?
The implication here is that Bloodchiefs were former brood themselves who gained sentience. The fact that The Lithomancer was retconned to not have them exist before the Eldrazi were sealed is very telling. They would sire more vampires, who were controlled by the Head Crab things. They were all used as mana distillers.
Many Vampires worshipped the Eldrazi or were confused as to their nature (See Stirring from Slumber). Pawn of Ulamog was one of the confused.

So what I think is depicted on Carrier Thrall and the new Kalitas is not an "Eldrazification" but more like and evolution back to be more like they used to be as Eldrazis. I hadn't thought very hard about it, but it makes more sense now. Pawn of Ulamog is helping hatch Eldrazi Spawn, kind of like how the enslaved Vampires in the book were helping put the killed Zendikari in holes.

Curiously, the fist time I read that UR I thought those memories were from the eldrazi sire, not Drana. Reading it now, it does clearly state they are hers. Interesting. I hope we get more info on this in future URs (in a Kalitas one, perhaps)

So far Ulamogs spawn seem to have at least 2 ways of being "born"
The birth of the spawns from other titans is unclear so far, I would guess that at least the being born from other beings would also be a way for them. Kozileks way will probably be revealed with Oath, for Emrakul its new version is the titan of corruption, with the ability to twist all things living, so maybe it can directly transform living things into spawns.

The reality is we don't really know. The best description we have is from Ugin, who describes them as beings of the blind eternities that can 'reach' into a plane. The Titans themselves, as they physically appear, are really just a piece of the true Eldrazi.
I think that's generally the process for all the spawn, but again there are no clear, concrete answers.

I thought so too until the Drana UR (http://magic.wizards.com/en/articles/archive/uncharted-realms/memories-blood-2015-09-16) implied that the Bloodchiefs are former Eldrazi brood, now I’m not so sure. I hope we get a Kalitas UR, a story from his perspective could clear it up if they are in fact just masks or an evolution back.

So far Ulamogs spawn seem to have at least 2 ways of being "born"
1. Born from a being like Carrier Thrall or other Eldrazi like Eldrazi Skyspawner or Blisterpod
2. Made from the "dust" the other leave behind, like Incubator Drone seems to depict or I think also Blight Herder(I'm not sure how much this way differs from point 1)
