OK. Let's say I am playing Legacy Reanimator. Now I cast Entomb then Reanimate. What actually is happening through lore? Am I discarding the essence of magic? A decomposing body? Etc.? And is the reanimation spell just reusing old magic or something?

Entomb is a bit more complicated if we want to really think about it. It graves ANY card. The graveyard is part physical location, part memory or echo. But in general it's one of those cards that you need to try really hard to make work in story.
The cabalist in the card's art buries a creature from your summons space (according to Scott McGough, this concept was what provided the groundwork for the Odyssey Block's dementia space), which your reanimate spell drags onto the battlefield. McGough went on to say that Creative's concept of the "summons space" was pretty old, dating back to when creatures were referred to as "Summon _____" rather than "Creature - ______". Apparently, land destruction worked similarly; the mages, or dueling planeswalkers gave the lands in their memories physical form in magical duels (McDermott said this was the equivalent of playing land cards). Chunks of memory dropped on the battlefield. Going by McGought and McDermott, it sounds like planeswalkers have a mindscape where they keep their creatures and lands. An entombed creature is buried in the mindscape. The reanimated version is what appears in the actual duel.

In the picture the cabalist is burring something that looks a treasure chest. I think entomb represents not only burring a corpse but also objects (in case of artifacts), constructions (lands) and memories (non-creature non-artifact spells).
In my head, when you use entomb, you're extracting the idea/memory/spell from you head, a bit like the memory extraction from Harry potter and then burying it somewhere outside of yourself.
With reanimate, you're causing a creature spell that exists outside of yourself to take form.
I'd visualize it as you using magic to localize the resting place of an adequate body (Entomb), to later cast the actual 'create undead' spell (Reanimate) on it.

Burying an idea works fine if we don't take the card art as the "only" way it works.

So it's more like a "True Resurrection" spell rather than "Raise Undead".
