I plan on finally writing a small series of Innistrad short stories because no one did anything for that set and it is just a gold mine of characters, settings, and motifs. It is begging for some kind of novel or short story.
However, I have a couple questions about matters that I simply couldn't figure out or find in my research attempts(not that I did hard core research but a couple search attempts yielded nothing and I figured asking those in the know would save time).
So, how much time passed between the disappearance of Avacyn and the Innistrad card set?
Where did the demons and devils come from? While on the subject, when did the Skirsdag Cult start?
Are all Parishes just under attack all the time by the Undead, Wereolves, and Vampires or are some safer than others(likes the ones closer to Thraben)?
i have absolutely no idea, to any of these questions, but just wanted to say that i will be keen to read these! i really think innistrad wasn't given the story justice it deserves
I think I remember that Avacyn had been gone for about a year total. I'm far from sure about that, though.
Demons and devils come from "Hell," as in the fiery underground realm of the plane that connects to the surface at points like the Ashmouth, Devil's Breach, Sulfur Falls, and spontaneous rifts as seen on Rolling Temblor and Into the Maw of Hell. In a more metaphysical sense, demons are physical manifestations of black mana in the same way that angels are physical manifestations of white mana. Devils are physical creatures that embody the destructive and vindictive emotions felt by demons, driven to commit cruel acts of mischief for their own sake. The Skirsdag cult was started probably not long after the first demons started appearing on the plane, which was not long after the creation of Avacyn.
The Planeswalker's Guide to Innistrad has information about the individual parishes and what threats to humanity are most common in each region.

The demons came before Avacyn. Remember, it was the demon Shilgengar who convinced Edgar Markov to create the vampiric curse. (source)
If you haven't read already I recommend reading the viral, I quite liked it. In fact I liked so much I've hosted a recently finished mafia game based on it.
The game is not being dumbed down. Control is doing fine; Draw-Go is not the only kind of control. Aggro is doing fine; Red Deck Wins is not the only kind of aggro. Creature combat is an important core concept and belongs in every color. Mythic rarity is not destroying the game. People whine too much for no good reason. Magic is more popular than ever, so keep calm, brew some decks and play some damn cards.
Creative has a policy to never make, much less release, precise maps or timelines of story material.
Partly so they don't have to put up with nitpicky fans with too much free time pointing out every little thing they did wrong.

I know that too, and it's correct they choose not to do it. With the way they handle canon
info, the uniformity of that map would last nothing.
The thing is I wanna make a map of Innistrad myself, and I wanna hear your opinions about
the size (and shape perhaps) of the continent/country. I've already seen the map posted in
the creative forums, but it's full of geographical errors.

This isn't really the place to be speculating about the actual map of Innistrad. We have a speculation subforum for that sort of thing.

Well, there isn't a big enough face palm for this one. I even have that in one of my favorites folders for MTG story line and setting stuff. -_-
Thanks for the answers folks. If I run into more questions later I know where to come.

They weren't as common as after Avacyn though.
Have to remember that before her, they were near mythical figures.
But having said all that... the Skirsdag very specifically worshipped Griselbrand. So it can't have predated him in any meaningful way.

I know, but the portion of Innistrad we know is a landmass divided in four provinces.
