If I have a Willbreaker out (Whenever a creature an opponent controls becomes the target of a spell or ability you control, gain control of that creature for as long as you control Willbreaker)
And I use Jace, Architect of Thought's +1 (Until your next turn, whenever a creature an opponent controls attacks, it gets -1/-0 until end of turn)
And then I am attacked by an opponent's creature(s)
Does that count as said creature(s) being the target(s) of an ability I control, thereby giving me control of them?

Willbreaker requires the spell or ability to target the creature before gaining control of it. Jace, Architect of Thought's +1 ability never targets, so it will not give you control of their creatures. It needs to be an ability which specifically says "target."
