I have a card that can summon an elemental creature for a turn and then sacrifice it (Incandescent Soulstoke). Does this mean a creature that is purely an elemental, such as Horde of Notions, or could it be an elemental shaman or even an elemental horror?
Any creature card that has the type elemental can be put into play, even if it has other types it is still an elemental.

The ability of Incandescent Soulstoke will allow you to put any creature card that has the type "Elemental" on it onto the battlefield, regardless of other types. Creatures with both Elemental and Shaman types still match that.
Note that you aren't casting the spells though, when using the Incandescent Soulstoke's ability. It's simply an ability that puts the card from your hand onto the battlefield.
