Let's say I have 4 random creatures out, an Ashnod's Altar (or any free sac outlet for that matter), a slew of creatures in my graveyard, and cast Living Death.
Can I then take priority back before Living Death resolves and sac my 4 creatures so that they come back to the battlefield instead of go to my graveyard?
Or do I have to gamble before I pass priority and sac them then?

No you cannot. If you pass priority, then your opponent passes priority back without doing anything, then you've both just passed priority in succession without doing anything, so the top spell or ability on the stack (Living Death) will resolve before you get priority again. If you want to sac your creatures, you would have to do so before passing priority to the opponent and before knowing if they'll respond to the Living Death. After you cast a spell or activate an ability, you get priority first, so you'll always get a chance to respond before your opponent does.
