Pretty much. Pestilence Demon will deal 1 damage to each creature. When SBAs are checked, it sees that every creature was dealt damage by a source with deathtouch and they are all destroyed (barring indestructible creatures, creatures that regenerate, and so on.) Scythe of the Wretched triggers for each creature destroyed this way. When each trigger resolves, you return the corresponding creature to the battlefield under your control and attach Scythe to it. The last creature returned will have Scythe attached to it when the dust settles.

Just to clarify, you get to choose the order of the triggers, so you get to choose the order the creatures enter the battlefield, thus you get to choose which creature the scythe will end up on.
