So, say my opponent attacks with 2 creatures, and i have X scions on the field, where x == cost of a removal Spell in hand. Could I block one of his creatures, then in response sac that scion to play the removal Spell on the other creature?

Yes. During the declare blockers step each player recieves priority so you can sac the scions to pay for the spell then. And a blocked creature is considered blocked even if all blockers die.

There are 2 possible answers. Do the creatures your opponent attacking with have trample?
Your opponent attacks. You block both creatures, block 1, and leave one unblocked (target). After the declare blockers step you both get priority. When you have priority, sac the tokens you have, and cast the kill spell. The kill spell resolves killing the target, blocked or unblocked doesn't matter. Now, we get to combat damage. That creature was blocked. Just because it no longer has a creature blocking it, you can sort of think of it as a 0/0 ghost. Can't really do much, but it is blocked. Now if the creature had trample, then all the damage would go through still, even though it was blocked, there is a 0/0, so the entirety of the power tramples over to you.
But yes, if they don't have trample, you won't take any damage and one of their guys is dead, the other is not.
