Because the champion trigger forces you to ether champion or sacrifice the creature with champion, you can just choose to not champion anything as to not exile your own creature.

You can still exile a faerie you control, but 1) the land-tapping ability will not trigger, because it is a separate ability that requires the Clique to be on the battlefield when the champion enter-the-battlefield trigger resolves, and 2) the exiled faerie will never come back, since the leave-the-battlefield trigger that returns the championed permanent has already happened, doing nothing since nothing was exiled yet at that point.

You can champion a faerie. Nothing will happen and you won't get it back.
Long answer:
When Mistbind Clique enters the battlefield, there is a trigger allowing you to champion a faerie. While that ability is on the stack, Mistbind clique is removed. This means that when the trigger resolves, you still have the choice to Champion a faerie, but the ability to tap down your opponent's lands doesn't happen until the Clique actually champions a faerie. Unfortunately, at this point, the creature is no longer on the battlefield, so its triggered ability won't trigger to tap down lands.
