If a creature enchanted with Celestial Mantle was attacking me, is there any way I could gain control of it mid combat (ie. Spinal Embrace, Act of Aggression) and have it double my life total instead? Are stolen creatures always removed from combat immediately? What about if I waited all the way until after the creature dealt damage and have the Mantle's trigger go on the stack, and then cast Spinal Embrace/AoA in response? Thanks.

No. Creatures are removed from combat at the moment they change controller, so it stops attacking you as soon as you cast the steal spell.
If you wait until after it has dealt damage, its ability will trigger go to the stack before you get priority in the combat damage step. Stealing the creature at this point will do nothing to the trigger; your opponent will still control the trigger so their life will be doubled, not yours.

Actually he will gain the life if he steals in response to the trigger, though the opp may control the trigger the triggers says to double the controller of the creatures life. And since he stole it, he is the controller and thus gains the life.
