I am at 0 life, but the op has a Abyssal Persecutor on board. I'm playing big green and swing for a ton. He blocks one of my fatties with Abby, and has no other blockers so ends up taking lethal damage.
Since I was at 0, Percy died during combat, but so did the op. Was this a draw? I played it as yes, casual so it doesn't matter, but it seems correct unless I am missing something about the assignment of damage.

No. If there were three or more players, there would be two state-based action events.
704.3. Whenever a player would get priority (see rule 116, “Timing and Priority”), the game checks for any of the listed conditions for state-based actions, then performs all applicable state-based actions simultaneously as a single event. If any state-based actions are performed as a result of a check, the check is repeated; otherwise all triggered abilities that are waiting to be put on the stack are put on the stack, then the check is repeated. Once no more state-based actions have been performed as the result of a check and no triggered abilities are waiting to be put on the stack, the appropriate player gets priority. This process also occurs during the cleanup step (see rule 514), except that if no state-based actions are performed as the result of the step’s first check and no triggered abilities are waiting to be put on the stack, then no player gets priority and the step ends.
The first one would involve two state-based actions: Abyssal Persecutor being destroyed by lethal damage, and the opponent losing due to having 0 or less life. The second state-based action event would consist of you losing. But since it was just the two of you, only the first event happens; the game is over before you can lose.

Why bother with mere rulings when so many answers can be found in the Rules?
Actually, this was a 3 player game but we completely missed the line that states "opponents cant lose". I killed player 3 long before, so they sat out.
In the event that we were all still playing what would the outcome have been?

The second state-based action event would consist of you losing.
Then I went on to point out that with just two players (left), the second state-based action doesn't get a chance to happen.
The reason your loss would be delayed is this part of the rule: "the game checks for any of the listed conditions for state-based actions, then performs all applicable state-based actions"
EDIT: I overlooked that you might be one of two players kept in the game by Abyssal Persecutor. In that case, lrmo's answer below applies.
There are two scenarios. You mention the 3rd player was at 0 or less life, so let's go through that one.
There is a Prosecutor with enough damage for it to be destroyed and the opponent at zero life. When state based actions are checked, the opponent will lose for having zero life and the Prosecutor will be destroyed. Now there are two players on the board with 0 life. State based actions are checked again and you both lose simultaneously, resulting in a draw between you and the 3rd player.
If the 3rd player was not in a losing position, he would instead win the game as only you would lose in that second check.

The only net decking I do involves the Home Depot
