Just to make sure... you have something like Vedalken Orrery in play when you're casting a sorcery on your opponent's turn, right?
As Shard stated, unless you had a way to cast a Sorcery off-turn, you couldn't have done this anyway. But if you did have a way, then yes, your action was entirely legal.

My opponent cast 7 elves spell during his turn, after which, I cast a grapeshot (counted 7 spells before grapeshot, so copy grapeshot 7X)
My opponent insist that storm will only copy when i cast my own spells before I cast grapeshot.
who is right?
Storm reads copy this for each spell cast before this one this turn.
No where in there does it say it has to be spells you cast.
