When I have an ordeal on my creature and my opponent destroys that creature, when the ordeal goes to the graveyard is that considered a "sacrifice" for the purpose of the triggered ability?
What about if my opponent destroys my creature in response, is that a sacrifice?
If going to the graveyard is not a sacrifice, what is the correct terminology for it going to the graveyard?

A permanent is sacrificed if and only if a cost or an effect instructs its controller to specifically "sacrifice" it. Any other method of putting a permanent into a graveyard without using the term "sacrifice" in its text isn't sacrificing.
An Aura that's put into its owner's graveyard for not being attached to something or an Aura spell that's put into its owner's graveyard for having an illegal target is neither sacrificed nor destroyed. Neither of these will trigger the Ordeal's ability.

There isn't really a concise term for this, but the exact event that is happening here is that a state-based action is putting the Aura into its owner's graveyard because it isn't attached to anything anymore. This isn't a sacrifice or destruction any more than a creature dying due to the legend rule or because it has 0 toughness is those things.
