My opponent controls a Wild Beastmaster and a 2/2 Wolf token. He attacks with both creatures (making the wolf a 3/3), and passes priority. We then reach the declare blockers step, and I chump block the Beastmaster.
Can my opponent then cast pump spells on his Beastmaster and thereby pump the unblocked wolf? Or is he too late, having passed the "Whenever ~ Attacks" trigger?

Its too late, the trigger will have resolved during the declare attackers step which is when it checks the power of the Beastmaster. It does not continually check.

Wild Beastmaster's triggered ability only checks her power at the time it resolves. So, no, he can't do that.
Other important rulings regarding the Beastmaster:
If your opponent somehow gets an extra combat step, and Wild Beastmaster attacks twice, the +X/+X effect stacks (as all +X/+X effects do).
If Wild Beastmaster is removed from the battlefield in response to her trigger, the game uses her power at the last time state based actions were checked before she left the battlefield.
If Wild Beastmaster somehow has negative power when her ability resolves, or at the last time state-based actions were checked before she left the battlefield, (say, a morbid Tragic Slip), her controller's creatures get a negative bonus, e.g. +(-12)/+(-12) = -12/-12.

Card advantage is not the same thing as card draw. Something for 2B cannot be strictly worse than something for BBB or 3BB. If you're taking out Swords to Plowshares for Plummet, you're a fool. Stop doing these things!
