1.) So, Hellrider and Hound of Griselbrand are attacking my opponent and there are no spells to stop them from my opponent and no creatures to block them. As the attack occurs Hellrider's ability triggers and here is my question, does the ability do two damage to my opponent due to there being two attacking creatures or three due to the fact the Hound of Griselbrand has double strike? Or does the mere fact the Hound is attacking at all just trigger the ability once?
2.) As I declare attackers in this same scenario if my opponent plays an unsummon or Aetherize does Hellrider's ability do nothing due to there not being a Hellrider on the battlefield when his ability finally gets to resolve on the stack?
1) 1 damage for each attacking creature is 2 damage. Double Strike doesn't factor in at all.
2) EDITED: No, the ability still resolves as normal. The Hellrider isn't an attacking creature anymore, but the ability will deal damage for the creatures, since they were declared as attackers, even if they are no longer on the battlefield as the ability resolves..

The fact that a creature with double strike will (typically) deal combat damage twice during a combat phase does not mean it is declared as an attacking creature more than once, which is the part that Hellrider looks for.
2. The ability will still resolve. Abilities exist independently of their sources, and Hellrider's ability doesn't say anything that would suggest the creature has to still be attacking for the damage to happen.

I misremembered the exact wording on Hellrider. Hellrider's trigger happens whenever a creature is declared as an attacker (I remembered it as "one damage for each attacking creature).
What I said above is incorrect, and it will continue to deal 2 damage either way - the creatures were declared as attackers, and the triggers will continue to resolve as normal.
I will edit my previous answer to avoid any further confusion.

Went to a new shop from a friend's recommendation, DQ'ed for willful violation of CR 100.6b.

Hellrider's ability triggers each time you declare a creature as attacking. As soon as that happens, the appropriate number of instances of its ability go onto the stack, and nothing will stop them from resolving with the exception of a few cards that can counter triggered abilities or otherwise remove them from the stack.
Notably: Hellrider itself does not need to be on the battlefield while its triggered abilities are resolving in order to deal damage (if it isn't on the battlefield, the game uses last known information about what Hellrider looked like on the battlefield to get the characteristics of the source of damage) and none of the attacking creatures have to remain on the battlefield for the damage from Hellrider's ability to go through.
For the ability to be affected by whether the attacking creatures are still around, Hellrider's ability would have to be worded with an intervening if clause ("if that creature is still attacking") or instead be a single trigger that counted your attacking creatures ("for each attacking creature").
