Say I attack with Geist of Saint Traft. Geist makes an Angel token which is exiled at the end of combat. Is there any point between the Angel dealing combat damage and the token being exiled where I can activate Sundial of the Infinite and keep my token?

Yes, there is. During the "End of Combat Step", a trigger will be put on the stack exiling the angel. If you activate your Sundial with that trigger on the stack, you will keep the angel indefinetely (since the exile trigger only goes on the stack once).
You can also use the ability during the Combat Damage step, since damage is the first thing that happens then. When a turn just ends, like with Sundial of the infinite or Time Stop, it exiles everything on the stack and proceeds to the cleanup step.
