If my opponent casts Force of Will countering my spell, and I cast Misdirection targetting Force of Will and changing it's target to itself, is that a legal move and work the way I think it will, which is countering Force of Will?
Yes it is. In fact, that is one of the major uses of Misdirection in eternal formats. FoW targets MisD because it's still resolving. MisD resolves, FoW is countered because it has no valid targets.
A spell can never target itself. However you can change the target of the force of will to the misdirection, since that will still be a spell on the stack when you change the target. The force will then be countered on resolution for having an illegal target.

Thats correct. You are able to change the target of the force to misdirection because while misdirection is resolving it's still a spell on the stack and can legally be targeted. As you stated the force will be countered when it tries to resolve because by then the misdirection is no longer on the stack.
