Let's say I have a Mortarpod on the battlefield under my control, and my opponent controls a Goblin Arsonist.
It's my opponent's turn. She casts Goblin Grenade, sacrificing the Arsonist. In response, I sacrifice the creature attached to Mortarpod and target the 1 damage at the Goblin Arsonist. My opponent responds to this by casting Galvanic Blast, targeting the creature that was attached to my Mortarpod.
My question is: is a sacrificed creature still a valid target for an ability on the stack? Will my Mortarpod still be able to target my opponent's Goblin Arsonist after it's already been sacrificed to pay for Goblin Grenade? Can my opponent still target my Germ token after it's been sacrificed to my Mortarpod?

Neither of these is a legal play. Sacrificing the creature is a cost of casting Goblin Grenade or activating the ability granted by Mortarpod. Players cannot respond to the payment of costs - by the time players get priority after the spell/ability has been cast/activated, the creature has already been sacrificed and cannot be targeted by things that target permanents.

Stop right there. That can't happen. The Arsonist was sacrificed as part of the cost of playing the Grenade. By the time you get priority, the Arsonist is no longer on the battlefield, so you cannot target the Arsonist with the Mortarpoded creature.

Same as above. The Mortarpoded creature has already been sacrificed and is no longer on the battlefield, and it not a legal target for the Blast.
