If I have one creature and the opponent has 2 and I attack with one and they only block with one creature if I lightning bolt their declared blocker does my creature still attacks the player and they cant declare another blocker correct?

If it's during/after the block phase, your creature is blocked but is dealt no combat damage from the blocker.
Kind of a follow-up to the OP, say my 4/4 has trample, and he has a 2/2 body that he blocks with, and I bolt it after he blocks. Does player take 2 trample damage? or 4?

Do note though that your guy stays blocked but no damage is exchanged so your guy or your opponent takes no damage.
