Wow, this exact question actually came up at my LGS on Tuesday, and I was about to reply telling Exsam that he was wrong... but then I clicked on the Autocard for Vines.
See, because none of us actually bothered to RTFC, we thought the trollshroud from Vines was a keyword ability that the targeted creature gained as a result of the spell, thus we thought the Giant Growth wouldn't be able to target the spellskite on account of it having said trollshroud. Thus, we ruled that the Giant Growth resolved without changing targets.

In the same situation, what if I used Naturalize on the Spellskite (instead of Vines of Vastwood). Would the Giant Growth fizzle or would my creature get the +3/+3?
The Giant Growth, which targets Spellskite, who does not exist, fizzles.
If you act before Giant Growth's target actually changes, then Spellskite's ability does nothing, because it can't give Giant Growth an illegal target.

If, on the other hand, you cast the Naturalize in response to the activation of Spellskite, then the Spellskite will have left the battlefield by the time it ability comes to resolve. Since the Spellskite is no longer there, it is an illegal target for Giant Growth, and therefore the ability will be unable to change the Growth's target to Spellskite. It will thus not change target, so when it resovles it will affect the creature you targeted.
That is what I am suggesting, as soon as I get priority after the Spellskite ability is activated (hasn't resolved yet), I destroy the Spellskite with a Naturalize. Seems a bit tricky because the target was legal at the time of the activation, but not on resolution.

If you respond to the spellskite's ability instead of waiting for it to resolve then the Giant Growth will remain targeting your creature.
